SYSTEM AND METHOD FOR UPRIGHT CASTING MOLD FOR PRODUCING A COMESTIBLE BAKED PRODUCT IN COMPLEX SHAPES
20170188588 · 2017-07-06 ·

A system and method for producing a comestible baked product in complex shapes using cast molding. Embodiments generally include a first part and a second part, the first part, in some embodiments, being made up of at least two or more component pieces, then, the first part is detachably coupled to the second part creating an outer surface and an inner surface which create a contiguous internal hollow space that extends from the first piece to the second piece in the form of a three dimensional shape, and a means for supporting the unitary mold in a special and beneficial baking orientation. Other embodiments may include a single piece that is attachable to the rim of a cup of a multi-cup baking cup pan or a to a single, stand-alone cup pan. The interior of the mold can receive a baking cup liner.

Insulated pocket bun

The present disclosure describes a bun having a pair of cavities formed therein. The cavities include inner walls which are browned. The cavities form segregated areas which are suitable for receiving separate fillings for making a sandwich. The bun has an insulating wall separating adjacent cavities. The insulating wall may be thicker than the other walls in the bun or may further contain cavities or through-holes to further reduce thermal transfer between any fillings with different temperatures that may be located in the cavities. The browned inner walls in each of the cavities help prevent the bun from getting soggy.

Method of producing bakery products, such as batch breads, and baked products thus obtained

A method of producing bakery products, more particularly sandwich loaves or the like. The method consists essentially in preparing a dough, optionally, in fermenting said dough, in placing the dough in a mold, in performing at least one step of baking the dough present in the mold by means of microwaves, optionally, in performing another step of baking by other baking means, in detaching the resulting baked product from the walls of the mold, optionally, in cooling the baked product and/or the mold, and in demolding the baked product. The method is an effective, high-performance method of producing breadmaking products, notably crustless batch breads, by microwave baking, which is reliable, simple, inexpensive and give satisfaction in terms of industrial production and organoleptic quality.

A liner that can be used for baking. The liner includes an aperture such that the liner can be placed into a mold that also includes an aperture such that the aperture of the baking liner and the mold are at least partially aligned and, a substance to be baked can be injected into the mold through the aperture of the mold and the aperture of the liner. The liner may include one or more wings that at least partially cover the aperture and that can be folded through the aperture of the mold and against a surface of the mold to hold the liner in place. After baking, the one or more wings can be folded back over the aperture to at least partially cover the aperture.

The mold has a cavity (14) in which to place on each occasion at least the uncooked dough. The cavity (14) is delimited externally by an external perimeter edge (18). The molding member (16) is shaped with a closed profile, has a shape and size mating with those of the external perimeter edge (18), and has a position distanced from the mold (12) and a position coupled with the mold (12) in order to shape and mold the product (50) into the desired final shape.

Apparatus and method for baking rolls

Disclosed is an apparatus for baking products and particularly for baking rolls having an ornamental surface finish. The apparatus includes a baking tray which has a first mould and a second mould, and, preferably, an insert which is receivable in an opening formed in the second mould. The moulds are securable to one another to prevent them from separating during the baking process. The insert is held captive by the first mould or the first and second moulds combined in a position in which an internal cavity defined by an internal surface of the insert is aligned with a dough receiving cavity in the first mould when they are secured together. Also disclosed is a method of baking rolls.
