The invention relates to a method, a control and/or regulating device, a device and products as well as the use of such products. It is shown how gas-foamed products are manufactured from doughs or from pastes in an elongated process space and how the static pressure required for the gas dissolution is maintained in the process space up to the outlet opening and the foaming in the dough or in the paste is not initiated in a targeted manner under predetermined process conditions until the product exits from a metering valve device connected downstream of the process space and the pressure is reduced.
FOAMED, DOUGH-BASED FOOD AND APPARATUS AND METHOD FOR PRODUCTION THEREOF AND USE OF THE APPARATUS
A dough-based food product, an apparatus and method for production of the dough-based food product. A food product matrix to be foamed includes a proportion by weight of a starch-containing raw material and a proportion by weight of water. Gas that has been dissolved or is to be dissolved is introduced into the food product matrix to be foamed. The gas is dissolved under pressure in the food product matrix to be foamed. Gas bubbles are formed by expansion and increasing the volume with a resulting reduction in density of the dough as a result of bubble growth for formation of a foamed food product matrix of the food product to be produced. The foam is then stabilized. Gas is introduced into and dissolved in the aqueous component of the food product matrix to be foamed in a subcritical state below the critical point and at a pressure of 10 barp<critical pressure of the gas.
Kneading method and apparatus
A method and apparatus for a reciprocating kneader. A primary rotational gear is attached to a gear box primary shaft and rotates in concert therewith and engages a secondary rotational gear. The primary rotational gear drive provides a primary source of rotation for a kneading screw and for the secondary gear as a secondary source of rotation. An adjustable eccentric is coupled to the secondary oscillation gear and rotates in concert therewith for reciprocation motion.

A machine for kneading and extruding pasta, having a machine body, which includes electric gear motor having an output shaft with horizontal axis, a transmission from the output shaft to a driven shaft with a horizontal axis and parallel to the axis of the output shaft and coaxial to a shaft of a kneading reel, projecting externally to the machine body in a dough forming tank, having below and parallel to the shaft of the kneading reel an extrusion channel, in which a worm screw feeds an extrusion mass for forming pasta. The tank is a hopper, having two lateral walls, opposite and converging at the bottom into the extrusion channel, and two opposite vertical walls, front and rear. The rear wall of the tank is juxtaposed against a vertical wall of the machine body as a stiffening frame, having an upper horizontal cross-member, which forms a top edge of the tank, and a pair of V-shaped branches that form respective edges of the opposite lateral walls and of the channel of the tank. The stiffening frame is extends beyond the tank and provides an outer flange fixed relative to the tank. The tank is fixed with respect to the machine body by a detachable connection and is cantilevered relative to the vertical wall of the load-bearing frame. The detachable connection connects the outer flange with respect to the vertical wall of the load-bearing frame.
