PIZZA SPINNER
20200060292 · 2020-02-27 · ·

A device, system, and method for pizza dough shaping having a main housing 205; main drive 210; turntable 215 that holds the pan for rotation; clamping system 220 positioning the pan concentrically on the turntable 215 and holding it securely during spinning; forming ring 225 working with ram 230; and ram drive 235; wherein the device operation includes placing a dough ball roughly centered on the pan 1305; placing the pan onto turntable 1310; initiating start 1315; clamps engaging and centering pan on turntable 1320; forming ring lowering and surrounding dough ball 1325; ram lowering and pressing dough ball into a pancake that is accurately round and of uniform thickness 1330; readying to spin 1335; spinning ramp-up 1340; sustaining 1345; and ramping down 1350 through preselected profiles for uniform results, whereby the dough ball is formed into a finished pizza crust disk in approximately 30 seconds.

3D-food product forming apparatus and process

A process of inserting a stick into a meat patty, which is formed in a food product forming apparatus. The process includes inserting the stick at least partially into the meat patty while a drum of the food product forming apparatus rotates and the stick is moved for insertion into the meat patty by an insertion unit. While the stick is inserted into at least one cavity in one of the rows of cavities, another at least one cavity in another one of the rows of cavities is simultaneously filled with the meat patty. The step of inserting the stick takes place during a co-rotational movement of the drum and the insertion unit, while the drum rotates from a filling position to a discharge position.

Rotary molding system

A rotary molding system configured to mold food products includes a fill plate through which food product is configured to pass, a cylindrical rotatable drum having mold cavities into which the food product is configured to be deposited, and a platen mounted within the drum. The platen has a plurality of passageways configured to be in communication with the mold cavities. Drum roller supports and rollers are provided on the platen. The extends partially outwardly from the platen and are in contact with the drum.

Method and apparatus for shaping pizza dough

A method and an apparatus of forming food dough to be used for making bases for pizza and the like are described. The method provides for compressing a predefined mass or dose of dough between two surfaces and massaging it by deforming one of said surfaces, consisting of a flexible diaphragm whereon the dough is worked. For this purpose, the forming machine has idle tapered rollers arranged under the diaphragm, which make a motion of revolution about a vertical axis and roll on the extrados of the diaphragm. During the forming process, the dough is squeezed by a movable plate or cover.

CULINARY DEVICE

A roller of generally elongated ellipsoid of revolution (also known as prolate spheroid) shape having an outer corrugated surface comprised of rounded, smooth, curved surface ridges and furrows that are transversely oriented along a major axis of the roller.

Machine for moulding dough for oven-baked products
20190307133 · 2019-10-10 · ·

A machine for moulding dough for oven-baked products, of the rotary-moulding type, which is characterized by the configuration with which the conveyor belt (8) runs over the moulding roll (2) and preferably also in that it envisages two feed rolls (4A, 4B) opposed to one another positioned above the moulding roll (2).

Gyoza wrapper molding machine

A molding machine 1 is provided, which molds a gyoza wrapper by rolling a gyoza wrapper material lump. A first roller 12 rolls the gyoza wrapper material lump vertically downward to form an approximately elliptical semi-finished product. A direction changing device 30 including a pendulum 31 is positioned vertically below the first roller 12. The pendulum 31 includes a fulcrum portion 314 and an edge receiving portion 311 positioned closer to the central portion side of the first roller 12 than a position immediately below the fulcrum portion 31, which receives the front edge of the semi-finished product. When the semi-finished product is received by the edge receiving portion 311, the pendulum 31 changes the direction of the semi-finished product. A second roller 22 positioned vertically below the first roller 12 then rolls the semi-finished product vertically downward, so as to form a gyoza wrapper.

COMESTIBLE PRODUCT SHEETER AND SHEETER ROLLER, AND METHOD OF USING THE SAME

To address the problems inherent in creating very thin sheets of dough in a sheeting machine at high speed and with efficient recycling and re-sheeting of the re-work cut out from the sheet, a new sheeting machine with a new front roller is provided, wherein the roller includes non-stick and non-release areas and a plurality of grooves in the non-release area.

Dough Stretcher

A dough stretcher comprising a drive shaft mounted to rotate on a vertical system axis and a mechanism for rotating the drive shaft at a speed in the range of between 40 RPM and 100 RPM. The bottom end of a lower platen shaft is attached to the drive shaft to extend upwardly an angle of from 1 to 4 from the system axis. The lower platen is mounted to the top end of the lower platen shaft so that it rotates perpendicularly about the lower platen shaft. An upper platen is mounted above the lower platen to reciprocate vertically to the lower platen. In operation, as the upper platen is lowered, it touches the dough on the lower platen. As the lower platen gyrates, the upper platen flattens the dough and pushes it outwardly toward the edge.
