Flour of cereal grains, legumes, or other plant materials contains both protein and carbohydrate, in particular starch. The preparation procedure of flour emulsifier contains physical processing, including but not limited to specifically designed heating, milling, or the combinations of both. Emulsions of lipophilic materials are prepared using flour emulsifiers. The emulsions formed can be further dehydrated using spray drying, drum drying, freeze drying, vacuum drying, or other drying methods. The emulsions prepared using flour emulsifiers as well as their dehydrated products show enhanced stability against physical and chemical deteriorations as compared with those prepared using conventional emulsifiers, such as octenylsuccinate starch and gum arabic.

In an embodiment, an extruded pretzel snack is included having a three-dimensional structure including a plurality of gluten layers, the three-dimensional structure formed from a dough composition including a wheat flour, a leavening agent, and at least about 5 percent by weight oil content. In an embodiment, a method of making an extruded pretzel snack is included, the method including forming a dough composition including 40 to 70 weight percent of a wheat flour, 20 to 40 weight percent water, 5 to 15 weight percent vegetable oil, and a leavening agent, extruding the dough, cutting the extruded dough to form individual pieces, and proofing the individual pieces, and baking the individual pieces to reduce the moisture content to less than about 5 weight percent. A baked food composition is provided that exhibits an unexpectedly loose, crunchy texture and multi-textural chew. The baked composition comprises a high amount of expanded inclusions and shredded root vegetable, which are agglomerated by a binder component comprising low amounts of oil, added sugar, and flour. The food composition is preferably free of hydrocoiloid gums and sugar syrups.

The purpose of the present invention is to provide a composition for a baked confection, wherein a gluten-free baked confection having a best-before period and gustatory sensation (moistness, softness) equal to or better than those of a baked confection produced using flour can be produced using the composition. The composition for a baked confection according to the present invention contains cooked high-amylose rice, rice flour, and fats and oils and has a specific volume in a range of 0.2 to 1.5 ml/g, and is characterized in that the composition contains the high-amylose rice at 0.1 to 10% by mass, the rice flour at 5 to 15% by mass, and the fats and oils at 10 to 30% by mass.
