Methods for the production of a variety of tortilla products involve initial extrusion of one or more grain(s) and/or legume(s) using a twin-screw extruder, followed by mixing the extrudate with water and other ingredients to form a tortilla dough. The dough is then subdivided and formed into a flat tortilla shape, followed by cooking. The grain(s) and/or legume(s) may be previously extruded as a part of a continuous process. High quality tortilla products may be produced using a wide variety of grain(s) and/or legume(s), including gluten-free ingredients.

The brown rice and oat bread provided by the present disclosure includes the following ingredients: brown rice flour, gluten powder, oat flour, butter, sodium caseinate, salt, yeast, improver, and water. According to the present disclosure, the sodium caseinate is used to help form a dough and improve the flavor of the bread, and the brown rice and oat bread with low glycemic index is obtained with the brown rice bread recipe and special baking process, which is close to wheat bread in terms of specific volume, taste and tissue structure.

The manufacturing method for the U-shaped burger bread is characterized in that the paste is secondarily fermented, aged, formed and baked in the reverse U-shaped molding frame to be fixed as the U-shaped bread.

In particular embodiments, the flour mixture includes substantially equal amounts of the rice or tapioca flour, oat flour and quinoa flour by weight of the composition. In addition, the composition includes an enzyme for structural integrity purposes. In embodiments utilizing rice flour in the tri-flour blend, the composition can also comprises about 8% by weight of tapioca starch. Further, the gluten-free tortilla may be soft flat tortilla or a soft shaped tortilla having a formed shape selected from a cup, bowl, U- or square bottomed shaped taco shell, boat, tube, envelope or cone.
