EMULSIFIERS AND THE USES THEREOF
The present application relates generally to emulsifiers and methods of production thereof, and specifically to emulsifiers prepared using renewable and/or agricultural products through a physical process. Flour of cereal grains, legumes, or other plant materials contains both protein and carbohydrate, in particular starch. The preparation procedure of flour emulsifier contains physical processing, including but not limited to specifically designed heating, milling, or the combinations of both. Emulsions of lipophilic materials are prepared using flour emulsifiers. The emulsions formed can be further dehydrated using spray drying, drum drying, freeze drying, vacuum drying, or other drying methods. The emulsions prepared using flour emulsifiers as well as their dehydrated products show enhanced stability against physical and chemical deteriorations as compared with those prepared using conventional emulsifiers, such as octenylsuccinate starch and gum arabic.

The present invention relates generally to the field of foams. One aspect of the invention provides a foam having a continuous lipid phase and a porosity of between 1 and 80% wherein, at a temperature at which the lipid phase has a solid lipid content between 0.1 and 80% the foam comprises gas bubbles having at least 50% of their surface occupied by crystals comprising triglycerides. Further aspects of the invention are a product comprising a foam and a process for forming a foam.

PROTEIN HYDROLYSATES AS EMULSIFIER FOR BAKED GOODS
Use of a protein hydrolysate for the preparation of baked goods, preferably cakes, particularly fat free cakes, wherein the molecular weight of the protein hydrolysate is between 600 and 2400 Da and the solubility of the protein hydrolysate is at least 85%.

NON-BLOOM COMESTIBLE PRODUCT
The present invention provides a composite comestible product comprising distinct first and second components, wherein the first component has a total fat content comprising a randomly interesterified fat, the randomly interesterified fat having a saturated fat content of from 35 to 55 wt % by weight of the randomly interesterified fat, wherein the total fat content comprises from 20 to 50 wt % saturated fat and less than 3 wt % trans fatty acids by weight of the total fat content, and wherein the second component is a chocolate component comprising one or more sources of cocoa butter (CB) or cocoa butter equivalent (CBE).

Bakery Food Product
The present invention relates to a bakery food product produced from a mucilaginous hydrocolloid and a mannan-based hydrocolloid. The bakery food product is low fat and has a long shelf life, and a higher water resistance than traditional dough based foods. Also provided is a a method for making the bakery food product, and a liquid mixture for making a bakery product. Also provided are dehydrated food products produced from a mucilaginous hydrocolloid and a mannan-based hydrocolloid.
