A sandwich wrap including a flexible, edible sheet that is adapted to enfold an edible filling whereby the resulting enclosing tube has both ends open and an auxiliary support situated under the lowermost open end when the wrap is held vertically for consumption, thus restraining filling from exiting. A method using an assembly frame positions the auxiliary support. Filling is stocked in a capped filling storage tube including at least two components that can be disassembled from inside the edible enclosing tube to give the edible enclosed filling. The food product may include a set of separately enclosed different fillings and each edible enclosing tube may be shaped around the filling storage tube to give a cross-sectional form of a circle sector so that the set forms a right circular cylinder. A seepage container assists assembly in advance of an order to avoid impairment by moisture seeping out of fillings.

A pan system is provided having a male mold portion extending from a planar portion to create a pallet. Raw dough is rolled out to a sheet having a uniform thickness, which is then cut into a cut shape. The cut shape is designed to overlay the male mold portion and have overlapping seam areas. Optionally, a vacuum may be drawn through the male mold portion to draw the cut shape against the outer surface of the male mold portion. The overlapping seam areas are compacted and joined with pressure pads. Once the seam areas are joined, the dough is trimmed with a trimming die. The trimmed and seamed dough is then passed through an oven as it overlays the male mold portion to create a continuous baked pocket bun.

OUTER WRAPPER FOR ROLLED FOOD, ROLLED FOOD, AND METHOD FOR PRODUCING THE SAME

This invention provides a rolled food that maintains a crispy texture characteristic of a rolled food immediately after deep frying for several hours after deep frying and a method for producing the same. This invention also provides an outer wrapper for a rolled food, such as a spring roll, in which a degree of polymerization of a gluten protein in the outer wrapper baked before rolling is 32.00% or higher and the breaking strength measured using a creep meter under specific conditions is 4.30 N or higher. Further, this invention provides a rolled food prepared with the use of such outer wrapper and a method for producing such outer wrapper and rolled food.

Wrapper with Steam Venting Feature for Hot Food Items
20200369451 · 2020-11-26 ·

A wrapper and three-dimensional package for toasted and other hot food items that includes a sheet with an array of perforations extending through the sheet material between an inner face of the sheet material adapted to contact the food item, and an opposite, outer face of the sheet material. Spicules are formed from the sheet material surrounding each of the perforations and extending away from the inner face of the sheet material. The spicules form standoffs defining an air gap between the food item and the sheet material when the food item is contained in the wrapper, with the spicules engaging an outer surface of the food item to enable lateral migration of steam from the food item, along the air gap and through the perforations.
