CHEESE PRODUCT WITH CARRAGEENAN CASING
A cheese product with a carrageenan casing comprises soft cheese encapsulated in a casing comprising carrageenan. The cheese product can be manufactured by forming a coating comprising carrageenan around a soft cheese, for example by co-extruding the soft cheese within a liquid coating material comprising carrageenan such that the coating material forms a tubular coating around the cheese. The cheese product can be used to form the stuffing in a stuffed-crust pizza.

METHOD FOR AUTOMATED PRODUCTION OF READY-TO-EAT FLOUR-BASED CULINARY PRODUCT
The invention relates to the food industry. A method includes generating, via a server of a system, a selected order for processing by a control computer, as a result of which the necessary food base, which is located in a refrigerating unit, is sent to a first transport device where specific food ingredients are added in a prescribed manner, said ingredients being released from containers mounted above the first transport device. After this, the partially finished product is transferred to a second transport device, and, while moving along it, is baked to a finished condition in a baking unit. Then the baked product is transferred to a packaging sub-system which is connected to a sub-system for temporary storage and dispensing of the finished and packaged product.
PRODUCTION OF A YEAST-FREE, HIGHLY DIGESTIBLE PIZZA BY USING A DOUGH CONTAINING LACTIC ACID BACTERIA
A yeast-free, highly digestible pizza and a method for the production of said yeast-free pizza by using a dough containing selected lactic acid bacteria are described. The use of one or more strains of lactic acid bacteria for leavening a dough comprising water, flour, salt and other ingredients intended for preparing pizzas to be frozen and thawed before their consumption is also described.
