Method and Device for Longitudinally Cutting Poultry Legs Along a Contour Defined by an Inwardly Extending Bone Structure
Method and apparatus (1, 11) for longitudinally cutting poultry legs along a contour defined by an inwardly extending bone structure. The method comprises the steps of, and the apparatus (1, 11) having means (25) for, suspending at least one poultry leg at its ankle joint, and conveying the thus suspended poultry leg along a pre-defined path of conveyance (21). At least one cutting unit (1) with a directionable knife (73) is provided in the pre-defined path of conveyance (21). The at least one poultry leg is positioning such that it is lined-up for a longitudinal cutting engagement by the directionable knife (73), and the directionable knife (73) is brought into cutting engagement with the thus positioned poultry leg. During cutting engagement, position and cutting direction of the directionable knife are continuously adjusted to follow the contour defined by the bone structure of the poultry leg, while the positioned poultry leg is conveyed past the directionable knife (73).
MEAT PROCESSING
A meat quality and yield improvement process comprises hanging the hind leg(s) of a carcass and applying an additional pulling force of from 50 to 500 kgf to the leg and back muscles of the carcass. The additional force stretches the muscle filaments of the leg and back muscles and is maintained until rigor is complete. The hind leg(s) of the carcass may be hung at an angle of 90 to 170 degrees to the vertical.
Gambrel
A gambrel for hanging an animal to be butcher or skinned, the gambrel having an adjustable length suspension bar from which lines extend to be wrapped around the legs of the animal to be butchered or skinned. The adjustable length suspension bar consists of one elongated member inserted into another elongated member. Each elongated member has a slot through which each end of a gambrel suspension line is extended into and retained within each elongated member so that the geometry of the gambrel suspension line remains the same when length of the adjustable length suspension bar is changed to accommodate different sized animals.
Gambrel
A gambrel for hanging an animal to be butcher or skinned, the gambrel having an adjustable length suspension bar from which lines extend to be wrapped around the legs of the animal to be butchered or skinned. The adjustable length suspension bar consists of one elongated member inserted into another elongated member. Each elongated member has a slot through which each end of a gambrel suspension line is extended into and retained within each elongated member so that the geometry of the gambrel suspension line remains the same when length of the adjustable length suspension bar is changed to accommodate different sized animals.
BEEF SPLITTING METHOD AND SYSTEM
A system for processing a suspended beef carcass as the carcass is moved along a defined path. A robotic arm is carried on a moveable table and has mounted thereon a servo motor-driven band saw capable of effecting a splitting operation on the beef carcass. The band saw is counterbalanced by a mass having a weight less than the weight of the band saw, and the robotic arm has a maximum load-carrying capacity less than the weight of the band saw. A torque monitor for the servo motor detects breaks in the band saw or breaks in the support for the band saw. A vision-based sensor system detects location of a tail bone on the beef carcass. The system includes a controller in communication with the carcass rail, the carcass processing device and motor, and the vision-based sensor system.
Beef splitting method and system
A system for processing a suspended beef carcass as the carcass is moved along a defined path. MEAT PROCESSING EQUIPMENT HAVING IMPROVED YIELDABLE ARRESTING MEANS
Meat processing equipment is disclosed that includes a first element having a first face; a second element having a second face. The first and second faces extend parallel to one another and define a common plane between the first and second faces. The first and second elements are relatively movable with respect to one another. Yieldable arresting features are included for yieldably arresting the first and second elements in at least one predetermined position of relative movement, the yieldable arresting features include cooperating first and second permanent magnets, associated with at least one of the first and second elements.
Food processing system for processing carcass parts
A food processing system and a method, includes: an overhang rail system having a plurality of spaced apart shackles designed for carrying carcass parts such that the carcass parts are at least partly freely hanging, a re-positioning apparatus having an engagement structure selectively moveable by a moving mechanism, and at least one food processing device for performing at least one food processing step on the carcass parts while the carcass parts are conveyed past the at least one food processing device. The plurality of spaced apart shackles and the engagement structure move in a synchronized manner. The engagement structure is configured to engage the carcass parts at a position different from the carrying position of the shackle and adjusting the angular position relative to a vertical axis from an initial angular position to a pre-defined angular processing position.
Poultry processing line
A poultry processing line with a conveying track and can include at least one carriage movable in the conveying track. Wheels on opposite sides of the carriage are mounted on an axle guided through a shaft or bore of the carriage, and are movable along supports for the respective wheels on opposite sides of the conveying track. The shaft or bore has a convex inner top surface and convex inner bottom surface as seen in the shaft or bore's longitudinal direction.
POULTRY PROCESSING LINE
A poultry processing line with a conveying track and can include at least one carriage movable in the conveying track. Wheels on opposite sides of the carriage are mounted on an axle guided through a shaft or bore of the carriage, and are movable along supports for the respective wheels on opposite sides of the conveying track. The shaft or bore has a convex inner top surface and convex inner bottom surface as seen in the shaft or bore's longitudinal direction.
