SYSTEM AND METHOD FOR PRODUCING FORMED MEAT PATTIES
An apparatus for forming a meat patty includes heating a ground meat product to a temperature T1, wherein T1>32 F. The ground meat product is formed into an uncooked patty at temperature T1. The uncooked patty is precooked to form a precooked patty having a skin of depth D comprising denatured protein. The skin is formed on at least an area on the outside of the precooked patty. At least a first portion of the meat product disposed beneath said skin is at approximately T1. The precooked patty is cooked to form a cooked patty, wherein said at least a first portion of the meat product is at a temperature T2.
PRODUCTION OF PRECOOKED FORMED MEAT PATTIES
A cold forming process for forming a meat patty includes heating a ground meat product to a temperature T.sub.1, wherein T.sub.140 F. The ground meat product is formed into an uncooked patty at temperature T.sub.1. The uncooked patty is precooked to form a precooked patty having a skin of depth D comprising denatured protein. The skin is formed on at least an area on the outside of the precooked patty. At least a first portion of the meat product disposed beneath said skin is at approximately T.sub.1. The precooked patty is cooked to form a cooked patty, wherein said at least a first portion of the meat product is at a temperature T.sub.2. The cooked patty is then frozen and then packaged.
Method for cleaning and/ or evaluating a food products mould drum and a combination of such a food products mould drum and a mould drum cleaning and/ or evaluating device
A method for cleaning and/or evaluating a food products mould drum and a combination of such a food products mould drum and a mould drum cleaning and/or evaluating device are disclosed. The mould drum cleaning and/or evaluating device includes one or more pressure housings arranged against the outside of and over one or more mould cavities and form, together with the mould drum, an outside chamber. The outside chamber includes a chamber port connectable to a pressure line of a fluid circuit, and the mould drum includes a passage port connectable to a return line of the fluid circuit. Cleaning/evaluating occurs by allowing a pressurized fluid stream to enter via the chamber port into mould cavities and then via a wall part porous structure through a passage, and exit via the passage port to the return line of the fluid circuit.

A tooling for forming patties from a food mass includes a mould cavity holder; a mould cavity arranged such that it is received in the mould cavity holder, the mould cavity being made of a material porous to a fluid and including an internal face defining a patty forming mould and an external face separated from the internal face by a body of porous material; a clamp for clamping the mould cavity in the mould cavity holder; and a seal placed between the mould cavity and one of the mould cavity holder and the clamp. The seal is arranged such that it forces a pressure fluid, brought to the external face of the body of porous material to pass therethrough to the internal face.
System and method for forming a food patty
One variation of a system for forming a meat patty includes: a cylinder operable in a upright position and an inverted position; a piston running within the cylinder and defining a set of gas ports; a grinder configured to grind meat and to dispense a quantity of ground meat into the cylinder, in the upright position, during a grind cycle; an actuator system configured to transition the cylinder from the upright position to the inverted position during a dispense cycle to dispense the quantity of ground meat from the cylinder; and a gas supply configured to supply gas to the cylinder behind the piston at a first pressure during the grind cycle to limit ingress of ground meat into the gas ports and at a second pressure greater than the first pressure during the dispense cycle to dislodge the quantity of ground meat from the piston.
System for picking up, conveying, and delivering a product, and method of controlling such system
The present invention relates to a system for picking up, conveying, and delivering a foodstuff product to a processing machine which preferably has an upright magazine tube, said system including: a handling device, a gripping device releasably attachable to the handling device, a transporting apparatus, and a control unit; wherein the transporting apparatus has a transporting portion on which the foodstuff product that is to be picked up by the gripping device may be positioned in a pick-up position allowing the foodstuff product to be picked up by the gripping device, and the control unit is connected at least to the handling device of the gripping device and to the transporting apparatus; wherein the control unit is configured for detecting when the foodstuff product to be picked up has reached the pick-up position.
Device for molding a foodstuff
Provided herein is device and kit for molding a foodstuff, for example, a ground meat or a bread dough, to make a kabob. Generally, the separate component parts of the device are a container, a mold and a press which are removably engageable one with the other. Particularly, the container is fluidly connected to the mold via a bayonet connector. The press is configured to slide within the connector and to provide a support base for the connector and mold when assembled. The press has a removable cap and also is a storage container for the skewers used to make the kabobs. The kit for molding the foodstuff contains the device and skewers stored within the press.
SENSOR SYSTEM FOR PATTY FORMING MACHINE AND METHOD OF USE
A patty forming machine is configured to mold food products. The machine includes a stripper plate through which food product is configured to pass when the stripper plate is in a fill position, a sensor configured to determine positions of the stripper plate, a movable mold, and a sensor configured to determine positions of the mold. A processor is operatively coupled with the sensors. The processor is configured to receive information from the sensors and to determine when the stripper plate is to be moved from the non-fill position to the fill position relative to a determined position of the mold.

To slice meat loafs (100) with cross sections that vary across their longitudinal extension into accurately weighted slices (101), it is known to bring the loaf (100) into a defined shape with a uniform cross section across its length inside a forming tube (2) by means of pressing before it is sliced.
According to the invention, the pressing is performed in the longitudinal direction (L, 10) and the transversal direction (Q, 11) in a predefined order and in particular in multiple pressing steps (+Q, +L), which also comprise relieving strokes (Q, L) for the purpose of reducing the force exertion for pressing, on the one hand, and, on the other, for keeping the tissue structure of the loaf (100) intact.
Apparatus and process for the production with an interleaver
An apparatus for formation of products comprising an edible material and an interleaver, the apparatus including a drum with mold cavities, each with a bottom and a sidewall, in which the edible material is formed. The apparatus including an interleaver storage having one or more interleavers, and a transportation means configured to transport the one or more interleavers from the interleaver storage to a circumference of the drum where the edible material is placed on the interleaver. The bottom and/or the sidewall is made from a porous material and pressurized gas is forced through the porous material to eject the edible material from the mold cavities. After ejection, the products are stacked such that one interleaver is between two edible materials.
