The invention relates to a circular knife device (10) for cutting to size sheet-like materials, in particular paperboard and/or textile materials, in particular cover boards and/or covering materials, wherein the circular knife device (10) defines a cutting plane in which the sheet-like materials are arranged and are moved in a transport direction (14), having at least one circular knife (46) and an associated circular knife axis, wherein the circular knife (46) is rotatable about the circular knife axis, wherein the at least one circular knife (46) is movable parallel to the cutting plane and perpendicularly to the transport direction (14) with the result that a blank width of the sheet-like materials is settable in a variable manner, wherein the at least one circular knife (46) is mounted so as to be pivotable about a pivot axis (52) arranged substantially perpendicular to the cutting plane such that cuts at an angle to the transport direction (14) and curved cuts of the sheet-like materials are able to be executed.

A cutting machine for cutting a food product includes a housing and a blade cover removably mounted to the housing via at least two positive or non-positive fastening points. A circular blade is rotatably disposed in the housing such that the blade cover covers a surface of the circular blade. A carriage is movably mounted parallel to the circular blade and includes a carriage surface for holding the food product. Each of the fastening points are disposed beneath the carriage surface.

MACHINES AND METHODS FOR CUTTING PRODUCTS TO PRODUCE REDUCED-SIZE PRODUCTS THEREFROM
Machines and methods suitable for performing cutting operations on products to yield a reduced-size product, for example, slicing and strip-cutting elongate food products. Such a method includes simultaneously delivering products to annular-shaped cavities of a rotating impeller. The products are simultaneously delivered with a feed unit that has a feed chute extension that protrudes into an interior of the impeller. The feed chute extension defines feed chutes that are aligned with the annular-shaped cavities of the impeller and direct the products to circumferential series of pockets within the annular-shaped cavities. The products are held within the pockets by centrifugal force as the products are carried past a slicing knife to form a first longitudinal cut through each of the products during a rotation of the impeller and to produce therefrom a substantially longitudinally sliced product.

A slicer for cutting slices of elongated food products includes a machine housing and a slicing blade that is held by the machine housing. An electric slicing motor drives the slicing blade, and a control unit actuates the slicing motor using a pulse-width modulation. The control unit includes a microcontroller and a motor output stage. The microcontroller is configured to generate pulse-width-modulated control signals by varying at least one of an amplitude, a frequency or a pulse width of the control signals and to forward the control signals to the slicing motor.
