An encasing apparatus for encasing meat products in a double casing including a combined film and a net is described. A casing tube is placed over a meat stuffing horn and is preloaded with a shirred film and net casing for double casing meat exiting the meat stuffing horn. To reduce the risk of tearing of the collagen as it is deshirred and stuffed, the casing tube is oversized with respect to the meat stuffing horn and has a first outer diameter within 10-20% of the diameter of the expanded collagen casing.
Method for controlling a clipping machine as well as a clipping machine therefor
The present invention relates to a method for producing sausage-shaped products, like sausages, containing a flowable filling material in a tubular or bag-shaped packaging casing, on a clipping machine having a control unit for controlling the clipping machine, the method comprises the steps of feeding the filling material in a feeding direction into the tubular or bag-shaped packaging casing stored on a filling tube and being closed at the front end by a closure means, like a closure clip, gathering the filled tubular or bag-shaped packaging casing by gathering means arranged downstream the filling tube, for forming a plait-like portion thereto, and placing and closing at least one closure means on the plait-like portion for closing the filled tubular or bag-shaped packaging casing. The method includes the steps of starting the production process, automatically capturing at least one value of at least one parameter of the clipping machine and setting the captured value as the target value for said parameter in the further production process. The present invention further relates to a clipping machine on which the inventive method may be executed.

An apparatus and method for extruding extrudate through an extruding horn having a geometry that allows for a uniform flow from the discharge end into a cooking section that sets the outer surfaces of continuous flow of all meat specie. The technology as disclosed and claimed allows for uniform product thickness throughout the cooking process, increased system throughput, and increased bind in the sheet leading to overall increased product yields. The technology eliminates the need for a meat press ahead of the system to set thickness further reducing yields.

Apparatus for filling tubular cases
An apparatus for filling tubular cases with a pasty material, such as gathered sausage skin casings with sausage meat, is provided. The apparatus includes at least one filling tube, which is rotatable and drivable about its longitudinal axis and on to which a case which can be filled with the material can be pulled, a receiving portion at which the filling tube is rotatably received, and a drive unit for driving the filling tube. The apparatus advantageously includes a magnetic coupling for making and breaking an at least force-locking torque transmission between the drive unit and the filling tube, which has a drive rotor and a driven roller that is displaceable relative to the drive rotor in the longitudinal direction of the filling tube. Thus, the positioning during filling is reliable and performed with simplified structure. A filling machine including the apparatus is also provided.

A food-processing system having a metering pump for filling a casing with food material, a linker for forming links in the filled casing and depositing a linked strand on a conveyor, and a plurality of servo motors arranged to drive each of a plurality of driven components of the processing system. The food-processing system being implemented according to a two-step ramp-up method that enables increased control of a first end and a second end of the linked strand using a first speed, and enables faster processing of the linked strand between the ends at a second speed higher than the first speed.
Coextrusion head, food processing machine and assembly method
A coextrusion head for a food processing machine includes a feed line section having an inner pipe for conducting in the production direction a food mass to be formed into a strand. An inlet end of the inner pipe is connectable to an outlet of a stuffing machine. A housing extends in the production direction from the feed line section and surrounding the inner pipe. A receiving chamber, formed between the inner pipe and the housing, for a casing material to be applied to the strand. The receiving chamber has a housing inlet for the casing material. The feed line section and the housing are integrally embodied and the coextrusion head further includes a die attachment that has a die opening shaped correspondingly to the inner pipe and that is connected to the housing. A food processing machine having a coextrusion head and a corresponding assembly method are disclosed.
