System and method for a pellet-fired smoker
This invention relates in general to a pellet-fired smoker which includes a housing having a smoke chamber defined within it. A hopper holding pellet fuel supplies pellets through one or more augers to one or more fire pots configured to enhance smoking a food product by increasing the smoke flowing to a food product at various cooking temperatures.

LADDER RACK AND HEATING ASSEMBLY FOR AN INDOOR SMOKER
An indoor smoker includes a smoking chamber that is defined at least in part by a sidewall and a smoke generating assembly for providing a flow of smoke into the smoking chamber through a chamber inlet defined in the sidewall. A ladder rack is mounted to the sidewall for supporting a plurality of racks and includes a support plate that is space apart from the sidewall to define a flow plenum for distributing the flow of smoke throughout the smoking chamber. A heating assembly includes a side heating element mounted to the sidewall adjacent to the flow plenum for heating the flow of smoke within the plenum and urging the flow of smoke upward through the flow plenum along the vertical direction.
LADDER RACK AND HEATING ASSEMBLY FOR AN INDOOR SMOKER
An indoor smoker includes a smoking chamber that is defined at least in part by a sidewall and a smoke generating assembly for providing a flow of smoke into the smoking chamber through a chamber inlet defined in the sidewall. A ladder rack is mounted to the sidewall for supporting a plurality of racks and includes a support plate that is space apart from the sidewall to define a flow plenum for distributing the flow of smoke throughout the smoking chamber. A heating assembly includes a side heating element mounted to the sidewall adjacent to the flow plenum for heating the flow of smoke within the plenum and urging the flow of smoke upward through the flow plenum along the vertical direction.
SMOKED FOOD, METHOD FOR SMOKING FOOD AND APPARATUS THEREFOR
Food for human consumption is smoked by providing smoke, removing one or more polycyclic aromatic hydrocarbons (PAHs) from the smoke and contacting the food with the treated smoke, or smoking the food and then removing the PAHs from the smoked food. PAH removal is selective, to remove the PAHs that contain 4 or more benzene rings, in particular without significantly changing the volatile profile of the smoked food. A selective filter is provided, as is apparatus comprising a smoke generator, a chamber in which to smoke food, and the selective filter, disposed between the smoke generator and the chamber.

SMOKE GENERATOR
A smoker includes a smoke generator that is configured to provide a controllable method of producing smoke without creating a flame. The device includes a housing including a hopper for storing a smoking fuel within the interior of the housing. The hopper feeds the smoking fuel to a fuel conveyor that is partially within the housing and partially exterior of the housing. A motor is connected to the fuel conveyor so that operation of the motor causes the smoking fuel to move along the length of the fuel conveyor. As the smoking fuel moves along the fuel conveyor, it is heated to produce continuous smoke without producing a flame. The smoke generator is capable of controlling the quality and the quantity of the smoke produced by the smoke generator independently of the heat that is used to cook food within a cabinet of the smoker.
SMOKE GENERATOR
A smoker includes a smoke generator that is configured to provide a controllable method of producing smoke without creating a flame. The device includes a housing including a hopper for storing a smoking fuel within the interior of the housing. The hopper feeds the smoking fuel to a fuel conveyor that is partially within the housing and partially exterior of the housing. A motor is connected to the fuel conveyor so that operation of the motor causes the smoking fuel to move along the length of the fuel conveyor. As the smoking fuel moves along the fuel conveyor, it is heated to produce continuous smoke without producing a flame. The smoke generator is capable of controlling the quality and the quantity of the smoke produced by the smoke generator independently of the heat that is used to cook food within a cabinet of the smoker.
DEVICES AND SYSTEMS FOR APPLYING SMOKE TO FOODS
Devices and Systems for generating culinary cooking smoke are provided. As one example, a device is provided that includes an elongated housing defining a first plurality of holes and an internal cavity accessible by an opening at an end of the elongated housing. The device further includes (i) a magnetic-coupling mechanism, coupled to the elongated housing, configured to detachably couple the elongated housing to an underside of a cooking grill, and (ii) an end cap, detachably coupled to the end of the elongated housing, that is configured to close the opening of the elongated housing. Furthermore, the internal cavity is configured to house a smoke-generating material that produces smoke when heated, and the first plurality of holes is configured to direct the smoke produced by the smoke-generating material toward the cooking grill.
