Coagulation of the marrow in bones
A method of treating a meat-substance containing a bone structure. The bone marrow is coagulated with microwaves generated by a solid-state RF energy source. The microwave heating may be carried out prior to a heat treatment of the meat-substance and/or may be carried out after slaughtering and before the fresh slaughtered meat-substance is frozen.

Smoker with Smoke Management System
A smoker for cooking a food product that has a smoke dissipater mounted inside the cabinet for dissipating smoke using a high capacity ion generator for negatively charging smoke molecules so that the negatively charged molecules agglomerate with positively charged smoke molecules resulting in heavier molecules that precipitate out of the air within the cabinet. The smoker further may include charged plates within the cabinet that attract the charged smoke molecules to further accelerate dissipation of the smoke within the cabinet. The smoker also includes an air exchanger including a low capacity ion generator, and a cabinet exhaust for continuously refreshing the smoke within the cabinet.

Smoke generating assembly for an indoor smoker
A smoke generating assembly for an indoor smoker includes a smoke barrel having a rotating auger positioned therein. The smoke barrel may be supplied with combustible material at a first end of the smoke barrel and the auger may be intermittently rotated to advance the combustible material toward a second end of the smoke barrel and over a smoldering heater to generate a flow of smoke. A discharge port at the end of the smoke barrel may be positioned over a water reservoir, and the auger may be selectively rotated to advance partially consumed combustible material out of the smoke barrel and into the water reservoir where it is quickly extinguished.

Smoker with Top Heat Source
A smoker with a low temperature bottom heat source for cooking and smoking a food product and a high temperature top heat source for subsequently browning the food product.

MICROWAVE OVEN SMOKING CONTAINER
A microwave oven smoking container includes: a container body in which food material is accommodated; a container lid for covering the top of the container body; a smoke-generating part formed in the container lid; a first heating element which is disposed inside the smoke-generating part, and which generates heat by means of the electromagnetic waves of the microwave oven; and sawdust arranged inside the smoke-generating part, and arranged to be in close contact with the first heating element so as to generate smoke during heat generation by the first heating element, wherein the smoke-generating part or the container lid has a through-hole allowing communication with the inside of the container body, smoke is generated from the sawdust while the first heating element generates heat by means of the electromagnetic waves of the microwave oven, and the generated smoke flows into the container body through the through-hole.
