A process that includes receiving, by a trimmer via a conveyor system, a foodstuff, automatically trimming, by the trimmer and based on trimming instructions, the foodstuff that results in trimmings and a trimmed foodstuff. The process also includes advancing, via the conveyor system, the trimmings of the foodstuff to a trimmings collector, and advancing, via the conveyor system, the trimmed foodstuff out of the trimmer. The trimmer is provided on the conveyor system prior to an injector such that the trimmer performs the automatic trimming of the foodstuff prior to injecting the foodstuff with a liquid solution by the injector.

A monorail conveyor 22 extends from the entrance 18 to the exit 20 and passes thorough the tunnel 2. Poultry suspension shackles 24 are able to pass along the conveyor 22. Thus, poultry carcasses are able to be conveyed through the tunnel 2. The conveyor 22 may follow a path which reverses direction at least once.

The first auger section includes a first auger shaft and a first auger flight. The first auger flight includes a first helical portion on the first auger shaft and a first flight extension that extends away from the first helical portion. The second auger section includes a second auger shaft coupled to the first auger shaft and a second auger flight. The second auger flight includes a second helical portion on the second auger shaft and a second flight extension that extends away from the second helical portion. The chiller includes a hanger bearing assembly between the first and second auger sections and extending to an upper portion of the tank.

The apparatus further includes a coolant tank disposed beneath the second conveyor and storing coolant that freezes foods fallen from the second conveyor, a third conveyor having at least one portion thereof submerged in the coolant in the coolant tank and conveying the foods fallen from the second conveyor while immersing them in the coolant, and a coolant spraying means disposed above the first conveyor and spraying coolant toward the first conveyor.

Methods for related apparatus for increasing antimicrobial efficacy in a poultry chiller tank

Methods and related apparatus for improving the efficacy of antimicrobial agents within processing tanks. Processing tanks can include side streams for introducing antimicrobial agents into the processing tanks. The antimicrobial agents will be added and mixed in the side stream to form a processing solution. Additional actions can be conducted on the processing solution within the side stream including any and or all of heating, pumping, sampling, measuring, testing and pH adjustment of the processing solution. The processing solution is divided into at least two processing solution steams, which can be introduced at two different and distinct locations within the processing tank such as a carcass introduction end and a carcass removal end. By simultaneously introducing at least two processing solution streams at different locations of the processing tank, large concentration gradients of the antimicrobial agent are avoided.

An injector receives the trimmed foodstuff and injects, based on injection instructions, a liquid solution into the trimmed foodstuff to generate an injected foodstuff. A cooker receives the injected foodstuff and cooks, based on cooking instructions, the injected foodstuff that results in a cooked foodstuff. A chiller receives the cooked foodstuff and chills the cooked foodstuff that results in a chilled foodstuff. A second trimmer receives the chilled foodstuff and automatically trims, based on second trimming instructions, the foodstuff that results in second trimmings and a trimmed chilled foodstuff. The second trimmer advances, via the conveyor system, the trimmed chilled foodstuff out of the second trimmer.

AUGER-STYLE LIQUID TREATMENT TANKS WITH INSTRUMENTATION

Disclosed are various embodiments of an auger-style treatment tank equipped with instrumentation. In one embodiment, an auger treatment tank includes an auger configured to rotate within treatment liquid in the auger treatment tank. The auger includes an auger shaft and at least one auger flight coupled to and helically disposed about the auger shaft. The auger treatment tank also includes one or more sensors configured to provide data directly or indirectly indicating a torque transmitted to the auger to effect rotation.
