PROCESS FOR THE PRODUCTION OF CHEESE
A process for the production of cheese is suggested, comprising or consisting of the following steps: (i) providing milk; (ii) coagulation of the milk while adding starter cultures and/or rennet material; (iii) separation of the coagulated milk of step (ii) into whey and curd; (iv) processing the whey obtained in step (iii) with fine curd particles contained therein into a stable suspension; and (v) further processing of the curd obtained in step (iii) into cheese, characterised in that (a) before the separation of whey and curd, the process contains a further step, wherein milk is subjected to filtration and/or bactofugation, obtaining a bacterial concentrate and a treated milk; (b) the bacterial concentrate obtained in step (a) is sterilised, and the sterilised bacterial concentrate is re-added to the treated milk; and (c) the suspension produced in step (iv) is either added to the bactofugate obtained in step (a), or is added to the sterilised bacterial concentrate obtained in step (b).
HEAT STABLE FRESH CHEESE
The invention pertains to whey-bound fresh cheese such as cream cheese, and the stabilization thereof using granular starch and an amylomaltase-treated starch and/or an emulsifier, and to methods of making such fresh cheeses. Whey-bound fresh cheeses with these additional ingredients display increased stability, which makes them suitable for application in heated food products. In addition, the invention is directed to food products comprising such whey-bound fresh cheeses, as well to methods of making these food products, and to use of a granular starch and amylomaltase-treated starch for the stabilization of a whey-bound fresh cheese.
METHOD FOR THE MANUFACTURE OF A CREAM CHEESE
The present invention relates to a method for the manufacture of a cream cheese, the method comprising: (i) providing a first dairy liquid; (ii) fermenting the first dairy liquid to form a first acidified dairy liquid; (iii) providing a second dairy liquid; (iv) acidifying the second dairy liquid with citric acid to form a second acidified dairy liquid; (v) combining the first acidified dairy liquid and the second acidified dairy liquid to form a cream cheese.

The application is also directed to a culture or kit-of-part comprising or consisting of a) a galactose-positive Streptococcus thermophilus strain as defined herein, and b) Lactococcus strain(s) and/or Lactobacillus helveticus strain(s).

PROCESS FOR PRODUCING INFANT FORMULA PRODUCTS AND DAIRY PRODUCTS
The invention pertains to a process for simultaneous producing an infant formula product and a dairy product from defatted animal milk, comprising (a) processing the milk into a casein stream, a whey protein stream and a lactose stream by a combination of microfiltration and ultrafiltration, wherein the casein stream originates from the microfiltration as retentate, the whey protein stream originates from the ultrafiltration as retentate and the lactose stream originates from the ultrafiltration as permeate; (b) combining at least part of the whey protein stream originating from step (a) and a lactose source to obtain are combined stream; (c) using the recombined stream originating from step (b) in the manufacture of the infant formula product; and (d) using at least part of the casein stream originating from step (a) and defatted animal milk in the manufacture of the dairy product. The invention further concerns the infant formula product obtainable by step (c) of the process according to the invention, and to the dairy product obtainable by step (d) of the process according to the invention.
