20230115992 · 2023-04-13 · ·

The problem of providing an oil and fat for chocolate products and a chocolate product each having oil and fat migration/blooming resistance and post-tempering thickening resistance can be solved by an oil and fat for chocolate products according to the present invention, an oil or fat for chocolate products according to the present invention which is obtained by mixing an oil and fat mainly composed of a StOSt triglyceride with a low-melting-point fraction of palm oil that serving as a liquid oil component and further contains a specific amount of an OStO component.

EDIBLE OIL/FAT COMPOSITION HAVING BACTERIOSTATIC EFFECT

Provided is an edible oil/fat composition having a bacteriostatic effect in addition to the functions of conventional edible oils and fats. The problem is solved by the edible oil/fat composition characterized by containing 70% by mass or more of an edible oil/fat, 0.002-10% by mass of a lipophilic bacteriostatic agent, and 0.1-10% by mass of an emulsifier.

Oil and fat composition, use thereof and food comprising the same

The present disclosure relates to an oil and fat composition, use thereof and a food comprising the oil and fat composition. The oil and fat composition of the disclosure comprises 50-99.5 wt % triglyceride and 0.5-50 wt % wax by the total weight of the composition, the triglyceride is represented by the following formula (1), and the definitions of the groups in formula (1) are as recorded in the description. The oil and fat composition is suitable for preparation of a food. ##STR00001##

PROCESS FOR MAKING OIL-FREE COMPOSITIONS COMPRISING PHOSPHOLIPDS

The present invention relates to a method of for extracting oil from an oil-containing phospholipid composition, comprising the steps of: (a) Providing the oil-containing phospholipid composition, said composition comprising phospholipids and oil, the oil being in an amount of between and 80 wt % relative to the total weight of the oil composition; (b) Admixing water with the oil-containing phospholipid composition to obtain an aqueous composition, wherein the weight ratio of composition to water is between 6.0:1.0 and 1.3:1.0; (c) Separating the aqueous composition into an oil-rich fraction and an oil-depleted fraction, the oil-depleted fraction comprising water and phospholipids; and (d) removing the separated oil-rich fraction to obtain an aqueous, oil-depleted fraction comprising phospholipids; (e) optionally drying the aqueous, oil-depleted fraction to obtain a dried oil-depleted fraction comprising phospholipids.
