MILK-COMPONENT-CONTAINING COFFEE BEVERAGE
An object of the present invention is to provide a coffee beverage containing a milk component in which the precipitation generated by heat sterilization and/or upon storage of a coffee beverage containing a milk component is significantly inhibited by a simple method.
The object can be attained by incorporating three components: an organic acid, an organic acid salt, and an organic-acid ester of monoglyceride, in a coffee beverage containing a milk component.
Cold Brew Coffee Beverage and Method of Making the Same
Disclosed are processes for making cold brew beverage compositions including concentrates and apparatus for preparing cold brew beverage compositions. The disclosed processes and apparatus allow for efficient, rapid, industrial scale production of cold brew beverage compositions having improved total solid content, improved flavor stability, longer shelf-life, and adaptability to use in small volume containers.
EXTRACTION CELL
An upward flow extraction method, apparatus, and extract are disclosed. The upward flow extraction method can comprise loading extraction material into an extraction cell having a bottom portion and a top portion; introducing a first aliquot of extraction medium through the bottom portion of the extraction cell; expelling gas from the extraction cell through the top portion of the extraction cell; closing the top portion of the extraction cell and increasing the pressure in the extraction cell as extraction medium flows into the bottom portion of the extraction cell; stopping the flow of extraction medium into the extraction cell; steeping the extraction material in the extraction medium under pressure to produce an extract; and introducing a second aliquot of extraction medium through the bottom portion of the extraction cell to push extract through top portion of the extraction cell.
Beverage Brewing Product
A beverage brewing product for brewing a sweetened beverage is disclosed which produces a sweetened beverage solution that can be mixed with a diluting liquid and which comprises at least one water permeable sieve and/or a dissolvable film packet wherein beverage material and granulated sweetener are contained. The beverage material and sweetener are brewed and dissolved during steeping in hot water to produce a sweetened beverage solution. The beverage solution, if concentrated, is then mixed with a proportioned amount of diluting liquid to make a consistently sweet beverage. This beverage brewing product may be used to produce a variety of consistently sweetened beverages, including tea, coffee, lemonade, and other sweetened beverages.
N-acylated 1-aminocycloalkyl carboxylic acids as food flavouring compounds
Compounds represented by the formula ##STR00001## and their edible salts, and edible compositions containing same wherein R.sub.1 is an alkyl residue containing 6 to 20 carbon atoms, or an alkene residue containing from 9 to 25 carbon atoms with 1 to 6 double bonds, such that R.sub.1 together with the carbonyl group to which it is attached is a residue of a carboxylic acid, and the amino acid residue connected to the carbonyl carbon atom is a residue of a 1-amino cycloalkane carboxylic acid (ACCA), and n is 1, 2, 3 or 4.
Coffee concentrate composition
A concentrated coffee composition comprising the following components (A), (B) and (C); (A) chlorogenic acids, (B) total sugar, and (C) caffeine,
in which a mass ratio of the component (A) and the component (B), [(B)/(A)], is from 1.2 to 5, and a mass ratio of the component (A) and the component (C), [(C)/(A)], is 0.5 or less, and (F) Brix is 5% or more.
Hybrid system and method for producing a substantially non-foaming and foaming gas-infused beverages
A system prepares and dispenses non gas-infused and gas-infused beverages including a gas source, a pressurizable container connected to the gas source to receive a first flow of gas, a gas infusion tank connected to the gas source to receive a second flow of gas, a first dispensing tap that receives a portion of preprocessed beverage stored in the pressurizable container that flows under pressure from a portion of the first flow of gas to dispense a non gas-infused beverage from the first dispensing tap, and a second dispensing tap that receives gas-infused beverage from the gas infusion vessel to dispense the gas-infused beverage by the second dispensing tap, the gas-infused tank receiving a portion of the preprocessed beverage from the pressurizable container to infuse the preprocessed beverage in the gas infusion vessel with at least a portion of the second flow of gas.
BEVERAGE WITH HIGH SOLID CONTENT COMPRISING BETA-MANNASE
The invention relates to compositions for preparing a beverage, the composition comprises a) a coffee liquor or dried coffee extract ranging between 1-40% w/w; b) a creamer ranging between 1-20% w/w; c) a viscosity modifier ranging between 1-15 w/w %; d) an emulsifier ranging between 0.1 to 1%; and e) a -mannanase ranging between 0.1 to 1% w/w.
Container for Beverage
A container for beverage has a container body and a pressing member. The pressing member has a pair of guide grooves concavely formed to guide the user's fingers on two sides of the outer surface of the pressing member. The pressing member has a discharge hole positioned facing a nozzle from the container body so that the beverage contained in the container discharges through the nozzle and through the discharge hole when the pressing member is pressed towards the container body. The container body is ideal for containing coffee and pressurized gas to eject the coffee into a cup for enjoyment.
FOAMING PRESSURIZED BEVERAGE
A method of making a pressurized packaged liquid beverage. The method includes filling a container including a one-way valve with a liquid beverage, sealing the container, introducing a volume of gas through the one-way valve after sealing the container, and agitating the liquid beverage inside the sealed container, When the container is opened, the liquid beverage increases in volume and separates into liquid phase and a drinkable foam phase. The method may be carried out in a sealed container including a one-way valve adapted to allow a gas to enter the first container but not exit or a circulatory agitation system according to other embodiments. Thee liquid beverage may include milk, coffee, fruit juice, or mixtures thereof, particularly mixtures of milk and coffee, and may further include a gum. The gas may be nitrous oxide.
