ORAL COMPOSITION FOR IMPROVING MEMORY-LEARNING ABILITY
Provided is a novel functional composition having an excellent beneficial effect on memory-learning ability that can also be utilized in the form of a food or beverage, etc. Phosphatidylinositol is used as an active ingredient of an oral composition for improving memory-learning ability. The phosphatidylinositol is preferably derived from soybeans. This composition can be used suitably in the form of a food or beverage, food additive, pharmaceutical, supplement, animal feed, etc.
COCOA COMPOSITION
The present invention relates to a cocoa composition comprising at least 2 weight % of cocoa solids and less than 5 weight % of milk solids, and characterized in that it comprises 0.5-20% of a bulking ingredient and 0.5-10% of a plasticizers ingredient. Food products comprising the cocoa composition described are also provided, for example, bakery products, confectionary products, and dairy-alternative products.
CHOCOLATE COMPOSITIONS
The invention relates to chocolate compositions comprising a fat composition, at least one added sweetener, and, optionally, cocoa butter, cocoa powder, and/or milk solids. The added sweetener comprises a sugar alternative and, optionally, sucrose. A chocolate composition of the invention has at least one of a net carbohydrate rare sugar index of less than or equal to 1, a net carbohydrate sugar alcohol index of less than or equal to 1, and a sugar alternative caloric index of less than or equal to 30 cal/g. The invention also relates to chocolate confectionaries made with such chocolate compositions.

The present invention relates to food compositions, in particular food compositions comprising a dispersion of particles in a continuous fat phase, the particles comprising fat droplets dispersed within an amorphous continuous phase. Further aspects of the invention are a process for manufacturing a food composition and the use of particles comprising fat droplets dispersed in an amorphous continuous phase to reduce the sucrose content and/or the saturated fatty acid content of a fat-continuous confectionery product.
