Device and method for dosing cryogenic liquid

Systems and methods of producing a frozen food product include dosing ingredients with a liquefied gas while mixing the ingredients using self-cleaning interlocking beaters. The beaters are optionally also disposed to clean a container in which the ingredients are frozen. The rate and amount of cooling is controlled by measuring the quantity of liquid nitrogen, measuring viscosity of the frozen food product, measuring temperature, and/or the like.

Method and Apparatus for Producing Flash Frozen Confections

A method and apparatus for producing customized ice cream and ice cream-like confections that includes providing a liquid mixture of product, providing a bowl or wok and/or pan like freezing surface, providing a cryogenic storage vessel holding a quantity of cryogenic liquid, and directing a spray of cryogenic liquid onto the surface to provide a supercooled freezing surface. A quantity of the liquid confection mixture is the poured on the supercooled pan or bowl surface to flash freeze the mixture. The flash frozen product may then be transferred to a serving container and directly distributed to a consumer. The apparatus may also be provided with means for heating the freezing surface to facilitate transferring the flash frozen mixture of product to a serving container.

Frozen beverage machine valving

A dispensing apparatus has: a freezing cylinder; a water flowpath; a first controllable valve along the water flowpath; a syrup flowpath; and a second controllable valve along the syrup flowpath. The flowpaths merge as a water/syrup flowpath to the freezing cylinder. The first controllable valve and the second controllable valve each have: a valve body having a cartridge compartment, an inlet to the cartridge compartment, and an outlet from the cartridge compartment; and a valve cartridge. The valve cartridge has: a cartridge body mounted in the cartridge compartment; a valve element carried by the cartridge body; and a solenoid carried by the cartridge body and coupled to the valve element to drive movement of the valve element. The valve element is shiftable between a first condition permitting communication between the inlet and the outlet and a second condition blocking communication between the inlet and the outlet.

APPARATUS AND METHOD FOR MAKING A FROZEN CONFECTIONARY PRODUCT
20180325140 · 2018-11-15 ·

The invention relates to apparatus and method of making a frozen confectionary product such as ice cream or sorbet in which a confectionary mix is churned in a vessel whilst a liquid gas such as liquid nitrogen is added. Existing churning apparatus moves a stirrer through the ice cream mix in an epicyclical motion. This tends to splash liquid nitrogen so that it evaporates without contributing to the freezing of the ice cream. In the improved mixing method, the stirrer is repeatedly drawn against the inside wall(s) of the vessel. This reduces splashing of the liquid nitrogen. The drawing action also removes build up of frozen confectionary product on both the stirrer and the vessel walls and allows unfrozen confectionary mix to move to the edges of the vessel and be preferentially frozen.
