An apparatus for producing soft ice cream has a storage container (1) for receiving soft ice cream raw material in liquid form and a refrigeration chamber (4) with a mechanical mixing device (5) installed therein in which the soft ice cream raw material is mixed with air and thus prepared to form soft ice cream. The storage container (1) is a bag (8) which can be inserted into the apparatus, with an integrated single use pump (9) with an opening device (19) for the bag.

The present invention relates to a frozen confection product comprising glucono-delta-lactone. The present invention also relates to a method of producing a frozen confection product by adding glucono-delta-lactone to an ingredient mix and then homogenize, pasteurize, and freeze the mix. Preferably the method includes a post pasteurization acidification step. Preferably the method uses a standard freezing step followed by low temperature freezing.

The system prints cold slurry substances and includes a source of a cold slurry substance with a print platform supported for at least three axes of motion under computer control. An extruder head system including a nozzle extrudes a stream of the cold slurry substance from the source onto the print platform, the extruder head including a heater. A cryogen line is provided having a perforated section for surrounding the continuous stream of the cold slurry substance to spray a cryogen onto the cold slurry substance to cool it upon extrusion. A chilled compartment or freezer is provided in which the print platform, extruder head system, and cryogen line are contained to maintain those components at a selected temperature whereby the cold slurry substance is printed to form a desired three dimensional shape.

The liquid preparation passes between the top tank (12) and the refrigerated cylinder (14) via a mixer pipe (21) which mixes air with the passing preparation. The top tank (12) contains a motor-driven screw (26) rotating about a horizontal axis so as to push the product inside the tank (12) towards the mixer pipe (21).

a feed unit including a container containing a basic preparation for an ice cream, pastry or catering product, and a pressurized gaseous fluid injection device configured to inject the gaseous fluid into the container in such a way as to cause the basic preparation to be expelled from the container and transferred to the processing container;
a diluting liquid injection device for delivering a diluting liquid.

A liquid nitrogen dispenser is an apparatus that safely dispenses liquid nitrogen. The apparatus allows a user to create frozen food within a kitchen setting. The apparatus includes an anodized cover, an anodized mount, an anodized mount, a dispensing tube, a primary flow valve, a phase separator, an inlet, and an outlet. The anodized cover and the anodized mount house the primary flow valve. The dispensing tube defines a path for liquid nitrogen from the primary flow valve to the phase separator. The dispensing tube also positions and mounts the phase separator. The primary flow valve controls the flow liquid nitrogen. The phase separator provides better control of the liquid nitrogen dispensed from apparatus. The inlet and the outlet allow the primary flow valve to connect to a liquid nitrogen tank and to the phase separator, respectively, while housed within the anodized cover and the anodized mount.
