APPARATUS FOR DELIVERING FROZEN CONFECTION COMPRISING PARTICULATE MATERIAL
An apparatus (10) for dispensing frozen confectionery comprising particulate material, the apparatus comprising: a frozen confectionery dispenser, a particulate material dispenser, and a handle means (14); wherein the handle means (14) is adapted to provide a first actuation action for activation of the frozen confectionery dispenser and a second actuation action for activation of the particulate material dispenser, wherein the first and second actuation actions are independent of each other.
Systems and methods for ordering and preparation of customized comestibles
In an illustrative embodiment, systems for designing and producing customized food products include receiving a request to design a customized food product containing a printed edible medium. The systems may calculate, based on product inventory at a preferred bakery, a preparation lead time for the food product where the product inventory includes availability of printed edible media substrates. The systems may present customization user interface screens that provide customization options for the food product. The systems may convert customization option selections made at the customization user interface screens into decorating instructions for the food product and transmit the decorating instructions to the bakery. The systems may determine a position in a preparation queue for the food product based in part on attributes of pending food product orders in a preparation queue at the bakery.
A PROCESS FOR FILLING A RECEPTICLE WITH FROZEN CONFECTION
The invention relates to a process for the preparation of a frozen confection product comprising the steps of: a. rotating a receptacle about a substantially vertical axis and depositing a continuous stream of one or more frozen confections into the receptacle; b. depositing into the receptacle a batch of solid inclusions independently from the continuous stream of frozen confection of step a.; and c. cooling the product of step b. to 5 C. or lower; wherein, the duration of steps a. to b. is 2.0 seconds or less.

FROZEN DESSERT AND METHOD OF MAKING AND PACKAGING THE SAME
A frozen dessert includes a gelato layer and a meringue layer positioned on top of the gelato layer, wherein the meringue layer is heater to harden and color a top surface thereof. A method of making and packaging the frozen dessert includes making gelato for a gelato layer of the frozen dessert, adding the gelato to the container, placing the container and gelato in a blast chiller, making meringue for a meringue layer of the frozen dessert, adding the meringue layer on top of the gelato layer in the container and heating the meringue layer.
Oily food for inhibiting migration of water in frozen confectionery
The invention addresses the problem of providing an oily food for inhibiting water migration in frozen confectionery, the oily food being highly versatile and more effective in inhibiting water migration and being capable of application by spraying. The problem can be solved by use of an oily food for inhibiting water migration in frozen confectionery, the oily food satisfying the following requirements: 1. having a yield value of 1.7 to 12 Pa at 40 C.; 2. having plastic viscosity of 70 to 260 mPa.Math.s at 40 C.; 3. having a value of yield value/plastic viscosity of 10 or greater; and 4. having an oil content of 44 to 80 wt %.

CONFECTIONERY ITEM
Products and associated methods relate to a confectionery item having a boundary layer configured to prevent spun sugar of the confectionery item from breaking down. In an illustrative example, a confectionery item may include a frozen food core, a boundary layer configured to wrap the frozen food core, and a spun sugar layer configured to surround the boundary layer. In some embodiments, the boundary layer may be pliable at room temperature and hard at freezing temperatures. By adding the boundary layer, the frozen food core may, in some embodiments, not dissolve (e.g., burn or eat through) the spun sugar.
FROZEN CONFECTION SAUCE COMPOSITION
A novel frozen confection sauce composition comprising from 10 to 18 wt % vegetable fat that is solid at 4 C., from 24 to 32 wt % vegetable fat that is liquid at 4 C., from 5 to 10 wt % nut paste and from 30 to 40 wt % sugar. A novel frozen confection sauce composition for the reduction of sugar bloom.
Fiber-Containing Carbohydrate Composition
A food product comprises an oligosaccharide composition that is digestion resistant or slowly digestible. The oligosaccharide composition can be produced by a process that comprises producing an aqueous composition that comprises at least one oligosaccharide and at least one monosaccharide by saccharification of starch, membrane filtering the aqueous composition to form a monosaccharide-rich stream and an oligosaccharide-rich stream, and recovering the oligosaccharide-rich stream. Alternatively, the oligosaccharide composition can be produced by a process that comprises heating an aqueous feed composition that comprises at least one monosaccharide or linear saccharide oligomer, and that has a solids concentration of at least about 70% by weight, to a temperature of at least about 40 C., and contacting the feed composition with at least one catalyst that accelerates the rate of cleavage or formation of glucosyl bonds for a time sufficient to cause formation of non-linear saccharide oligomers, wherein a product composition is produced that contains a higher concentration of non-linear saccharide oligomers than linear saccharide oligomers.
