Protein product and preparation method thereof

A protein product and an extraction method for making the protein product. Raw materials of the product optionally contains macromolecular carbohydrates and/or fat, and the method does not use organic solvents. The protein product contains prolamin and carbohydrates, wherein the prolamin accounts for 70 wt % or above of the protein (dry-basis), the α-prolamin accounts for 75 wt % or above of the prolamin, the β-prolamin accounts for 20 wt % or below of the prolamin, and the γ-prolamin accounts for 6 wt % or below of the prolamin.

The present technology generally relates to food-processing industry, namely to a method of processing brewer's grains. The invention enables to increase the level of extracted food fractions of brewer's grains up to 90-95% and to increase protein content in barley protein concentrate up to 50-65% wt (dry solid). The method implies that brewer's grains are subject to loosening by means of a vibrating screen, grinding in a colloid mill with addition of water or centrate in the ratio from 0.5:1 to 1:1 to brewer's grains in order to produce a pasty homogeneous mass from brewer's grains; and then this mass is subject to processing by means of a screw extractor for its further grinding and division into 2 factions: suspension with the humidity level of 90-95%, and ground husk of brewer's grains with the humidity level of 60-75% suitable for its further industrial use. Then the suspension is supplied to mechanical filtration in order to remove the ground husk, pumped into the container and dried in order to obtain the humidity level of max. 7%.

Processes for separating and isolating proteins and fats from biomass matter utilizes a pH adjustment of a slurry. The biomass feedstock is derived from commingled animal and/or plant-based streams with highly variable concentrations of fat, proteins and impurities present in the biomass. A wide range of pH adjustment spanning highly acid to highly basic has been shown to be effective at separating the commingled streams into their constituent products. The processes do not rely on the proteins being solubilized into the solution, but rather solubilizing the fat portion, physically separating the constituents and precipitating the fat in a downstream process, resulting in two value streams: a highly digestible protein component and a fat component. The protein component has nutritional value as companion pet, animal and aquaculture feed ingredient and the fat component has value as standalone or blended solid or liquid biofuels, greases or specialty chemicals.

The invention relates to a process for a protein product from thin stillage, the process comprising the steps of: producing a first mixture from i) thin stillage and ii) a first aqueous solution or a first organic solvent; separating a solid phase from the first mixture by means of a first solid-liquid separation; producing a second mixture from i) the solid phase and ii) a second aqueous solution or a second organic solvent, provided that the first mixture and/or the second mixture must contain an organic solvent; and separating a solid phase from the second mixture by means of a second solid-liquid separation, wherein the solid phase comprises or includes the protein product.

The present invention provides a zymolytic rice protein powder with low granular sensation, and a method for preparing the zymolytic rice protein powder comprising the following steps: (1) pretreatment of rice residue after sugar production; (2) high temperature extrusion pretreatment; (3) refining treatment; (4) wet crushing; (5) controlling zymolysis; (6) terminating zymolysis; (7) microjet treatment; (8) spray drying; (9) subsequent crushing. The protein content of the zymolytic rice protein powder in the present invention is more than 80%; the fat content thereof is less than 3%; the water content thereof is less than 5%; and the nitrogen solubility index thereof is more than 30%. The molecular weight distribution of the soluble protein is as follows: the proportion thereof with a molecular weight of less than 2000 Da is more than 70%.
