MATERIALS AND METHODS FOR PROTEIN PRODUCTION
This document relates to materials and methods for the production of protein. For example, proteins having a low flavor or low color profile and food products comprising the same.
Method of making dried food products
A process for making a shelf-stable food, not requiring preservatives or refrigeration and in a form that is convenient for use as a snack food. A block of tofu or wheat gluten is first frozen so as to cause the formation of ice crystals that form cavities within the block. The frozen block is then thawed, cut into smaller pieces and drained of excess water. The thawed pieces are dried in a microwave-vacuum dehydrator to produce a crunchy food product.

IMPROVING TEXTURE OF PROTEIN
The present invention addresses the problem of providing a method for improving a texture of a protein. By allowing a protein deamidase to act on a substrate protein, a feeling of the protein on a tongue can be smoothened, and the texture thereof can be improved.

NO FLOUR NO FAT ADDED PROTEIN NOODLE AND PROTEIN IN SPHERE AND OVAL SHAPE AND PROCESS
This invention is related to fat-free, starch-free protein food that can be processed into noodles, spherical and rice-similar shapes, which consist of 2 parts: the first part are boiled water, egg white powder and/or soy protein, and/or whey protein, and/or pea protein, and/or brown rice protein, and sodium alginate; and the second part are boiled water and calcium chloride concentration as solid gel agent. Fat-free, starch-free protein food in noodles form has 0.5-5 mm diameter, spherical and rice-similar shapes have 2-5 millimetres diameter. Protein foods can be substituted for noodles or glass noodles, or beverages and desserts. This product is a nutritious health food, a good choice for patients and those who want to supplement protein to be able to eat in a variety way and more appetizing.

METHOD OF PREPARING FERMENTED FOOD BY USING NOVEL RHIZOPUS MICROSPORUS STRAIN, AND FERMENTED FOOD
A method for preparing a fermented food by using a Rhizopus microsporus strain is provided. The method includes the following steps: providing an isolated and purified Rhizopus microsporus strain, and its deposit number is DSM 34400; and inoculating the isolated and purified Rhizopus microsporus strain to a substrate for fermentation to form a fermented food. The substrate includes a legume, a processing residue of a legume, or a combination thereof.

METHOD OF GRADIENT HARVESTING PLANT PRODUCT AND COMBINE HARVESTER FOR THE SAME
A method of harvesting plant product from a plant in a single pass using a combine harvester is disclosed. In the method, the plant has a protein content gradient that varies along a height of the plant. The method includes identifying, along a longitudinally-extending stalk of the plant, an upper protein gradient of the plant including high protein plant product and a lower protein gradient of the plant including lower protein plant product, wherein the high protein plant product from the upper protein gradient of the plant meets a threshold protein content that is higher than that of the lower protein plant product. The method also includes separately and substantially simultaneously harvesting the high protein plant product from the upper protein gradient and the lower protein plant product from the lower protein gradient in the single pass, and isolating the high protein plant product from the lower protein plant product.
