MYCELIATED PROTEIN COMPOSITIONS HAVING IMPROVED TEXTURE AND METHODS FOR MAKING
Provided is a method to prepare a protein food product based on solid state fermentation, which includes the steps of preparing a sterilized substrate comprising a grain such as rice or quinoa and a plant protein concentrate or isolate such as pea protein, inoculating the sterilized substrate with a filamentous fungal culture such as Morchella esculenta culture, and culturing the filamentous fungal culture in the substrate, resulting in a myceliated substrate that has texture more similar to meat and/or improved flavor and aroma when cooked as compared to control substrate (e.g., unmyceliated). Similarity in texture to cooked meat includes increased spring and cohesiveness on chewing, and also where the protein food product, and the improved flavor includes increased savory and umami and decreased bitterness and improved aroma includes decreased pea or beany aroma. Also provided are protein food products made by the methods provided and food compositions, for example, meat analog products, made using the methods and compositions provided.

NATURAL FEED COMPOSITION DERIVED FROM FRESH WATER ALGAL CULTURES FOR THE PROMOTION OF ANIMAL GROWTH
A method and compound for promoting growth in both animals and humans are disclosed. The disclosed method utilizes a compound derived from a lipopolysaccharide (LPS) of gram-negative bacteria. The compound itself is a natural product with no observed adverse environmental impact. The compound is combined with conventional feed, such as a corn-soy feed, for administration to animals, such as poultry. Human application is possible, as well. The combination of the disclosed inventive compound and conventional feed works through multiple growth-related pathways within, for example, in healthy birds to enhance growth performance while also priming the immune system to expedite response to a disease challenge should one arise. Data indicate that the dietary mixture of the inventive compound in conventional feed suggests that the biomass alters the signaling of multiple growth-related pathways.

Multi-Use Fermentation Products Obtained Through Production of Sophorolipids
The subject invention provides methods for cultivating Starmerella bombicola yeasts for sophorolipid production, as well as a yeast fermentation product comprising supernatant, yeast cell biomass and other residual growth by-products that result when the sophorolipids are harvested. Methods of using this yeast fermentation product in animal feed, bioremediation, mining and/or bioleaching, agriculture, oil and gas recovery, human health, and many other applications, are also provided.

The prepared bio-fermented liquid feed has good palatability and high nutrition, easy digestion, low acidity, and is a liquid feed similar to breast milk, which can both effectively alleviate the weaning stress syndrome of piglets, and effect a seamless transition from breast milk to conventional solid feed.
