A method of preserving a flavor profile of a fermented beverage and controlling an alcohol content within the fermented beverage are provided. A desired alcohol content for the fermented beverage may be determined. The fermented beverage may be flash pasteurized to kill substantially all of a yeast used utilized for fermenting the fermented beverage. The flash pasteurized fermented beverage may be rapidly chilled.

The present invention belongs to the technical field of beverages, and relates to a probiotic fermented fruit and vegetable puree composition containing active bacteria and its preparation method. Apparatus and associated methods relate to a fermentation monitoring apparatus configured to generate a visual indicia in a fluid well in response to pressure inside a vessel exceeding a predetermined pressure. In an illustrative example, the fermentation monitoring apparatus may include a vessel cap that includes a fluid well holding a quantity of fluid, and at least one fluid communication channel. The fluid well, for example, may receive gas released from the channel via the at least one fluid communication channel when the vessel cap is coupled to a first end of a vessel to define a chamber and a gas pressure in the chamber exceeds a predetermined threshold. Various embodiments may advantageously generate a visual indicium of gas bubbles in the quantity of fluid indicating to a user that the gas pressure in the chamber has exceeded the predetermined threshold.

A production method for a fermented dairy product includes the steps of: producing sterile full fat soy flour having a grain size of from 100 to 1,000 meshes by pulverizing sterile dehulled soybeans prepared so as to have a bacterial count of 300 cells/g or less by using a method of separating whole soybeans into cotyledons, germs, and hulls; adding water to the sterile full fat soy flour to prepare a powdered soy juice, followed by sterilizing the powdered soy juice by heating; homogenizing the powdered soy juice to prepare a homogenized powdered soy juice; and adding a lactic acid bacterium to the homogenized powdered soy juice, followed by fermentation to prepare fermented milk.

The present invention relates to methods for preparing cereal-based beverages. The present invention provides, for example, methods for steeping and germination of cereal grain under continuous aeration. Particularly, the present invention provides methods for heating the germinated cereal grains prior to wet milling of germinated cereal grains and direct transfer of the germinated grain, without drying, to the brewery for further processing. Compared to current methods the methods of the present invention significantly reduce water consumption, energy consumption and transport need.

An apparatus used to ferment a liquid during kombucha manufacture includes a bonnet. The bonnet is configured to cover an opening of a container. The container defines a volume to hold the liquid. The container has a lip that defines the opening. The bonnet further includes a filter. The filter is permeable to a gas and has a pore size. The bonnet includes an elastic member. The elastic member is coupled to the filter. The elastic member is elastically engageable with the lip such that when the bonnet is attached to the container the bonnet covers the opening and the elastic member is removably sealable to the lip. When the bonnet is engaged with the lip, a gas can pass through the filter and particles larger than the pore size are kept out of the liquid by the filter during fermentation of the liquid, thereby preventing contamination of the liquid.
