FOOD COMPOSITION COMPRISING HEAT TREATED ALGAE

The present invention relates generally to the field of food compositions comprising algae. In particular, the present invention relates to a food composition comprising algae which are heat treated to reduce unwanted off-flavors. The algae may be algae from the Chlorella genus. For example, the algae may be Chlorella vulgaris. One embodiment of the present invention relates to a method to reduce the off-taste of an algae containing composition comprising a heat treatment, wherein the heat treatment comprises a primary heat treatment at a temperature in the range of about 130-160° C. and a secondary heat treatment at a temperature in the range of about 90-150° C.

Vegetable noodles and methods for making the same

The present disclosure features dried vegetable noodles having an increased shelf life and methods of making dehydrated vegetable noodles. The noodles are dry, shelf stable cut vegetable noodles (cut from whole produce, not extruded) and are lower in carbohydrate calories and higher in nutritional value than traditional grain-based noodles. The process results in a food safe, extended shelf stable singularized noodle that is nutritious, convenient and versatile.

The continuous pasteurization system (100) that pasteurizes raw food products (104) while substantially maintaining the raw state of the raw food products includes a conveyor (102) on which the raw food products (104) are loaded for delivery to a pasteurization apparatus 36, wherein the raw food products are quickly heated so that the temperature of the outer surface of the raw food products is raised sufficiently to achieve a desired pathogen kill level. Thereafter, the raw food products (104) are immediately cooled in a cooling apparatus (110) to remove the heat applied to the raw food product and maintain the substantial raw state of the raw food product. A control system (24) is connected to a processor (30) as well as various measuring devices and instruments, including temperature measurement devices (T.sub.1-T.sub.5) to control the operation of the pasteurization system (100).
