STABLE, SPRAY-DRIED PARTICLES AND PROCESS FOR OBTAINING SAME
Stable spray-dried particles are provided. The stable spray-dried particles include a water-soluble matrix including from about 5% to about 30% emulsifier; from about 20% to about 75% filler; and from 20% to about 50% mono, di and trisaccharides, based on the total weight of the matrix; and at least one active component encapsulated in the matrix. The emulsifier is dextrin and the filler is potato maltodextrin.

The present invention relates to amorphous porous particles comprising sugar, a bulking agent and surfactant, having a closed porosity of between 20 to 60% a sphericity of at least between 0.8 and 1. In a further aspect the present invention relates to a process of making said amorphous porous particles and their use as bulk sugar replacers in food products such as fat based confectionery products for example, chocolate.

METHOD AND SYSTEM FOR SPRAY DRYING INSECTS
In some examples, a system may be configured to generating flour having a uniform particle size of less than 100 Microns from whole insects. For example, the may include generating a slurry from whole insects by adding water while blending the whole insects using one or more mixers to generate an insect slurry. In some cases, the water is added to the insect parts to reduce the viscosity and to assist in separating the whole insects into parts. In some cases, the insect slurry may be filtered.

MICROBIAL COMPOSITIONS AND METHODS FOR GREATER TOLERABILITY AND PROLONGED SHELF LIFE
Provided herein are methods and compositions comprising microbial populations with increased tolerability and improved shelf life. Disclosed, herein, in some aspects, is a composition comprising at least one powdered microbial population, lactate, and trehalose. In some embodiments, the lactate is a lactate salt. In some embodiments, the lactate is sodium lactate. In some embodiments, the lactate and trehalose are present in sufficient amount to act as a cryoprotectant.
