METHOD FOR PRODUCING DEEP-FRIED FOOD
The present disclosure relates to a method for producing a deep-fried food. More specifically, the present disclosure relates to a method for producing a deep-fried food, comprising: a first step of deep-frying a food material to obtain a first deep-fried material, and tempering the first deep-fried material in a state of being taken out from an oil; a second step of deep-frying the first deep-fried material to obtain a second deep-fried material, and tempering the second deep-fried material in a state of being taken out from an oil; and a third step of deep-frying the second deep-fried material to obtain a deep-fried food from an oil, wherein a mass proportion of the deep-fried food to the food material is 85% or more.
LOW SATURATES CANOLA WITH DESIRABLE FRIED POTATO FRY HOLD TIME
Described herein is a canola oil for frying potato fries comprising a total saturates content of from 3.5% to 5%, a linoleic acid content of greater than 18%, and a linolenic acid content of less than 3.0, wherein the canola oil improves the flavor of a fried potato fry over an extended hold time. Also described herein is a fried potato fry made with a canola oil wherein the canola oil comprises a total saturates content of from 3.5% to 5%, a linoleic acid content of greater than 18%, and a linolenic acid content of less than 3.0, wherein the fried potato fry has improved flavor over an extended hold time. Additionally described herein is a method of extending hold time of a fried potato fry, comprising frying a potato fry with the canola oil described herein.
BLOWOUT SUPPRESSING AGENT FOR DEEP FRIED FOOD, METHOD FOR SUPPRESSING BLOWOUT AND DEEP FRIED FOOD
A blowout suppressing agent for a deep fried food includes a component A satisfying conditions of (1) to (4) below: (1) a starch content is equal to or more than 75% by mass; (2) equal to or more than 3% by mass and equal to or less than 45% by mass of molecular weight-reduced starch of starch having an amylose content of equal to or more than 5% by mass is contained, where the molecular weight-reduced starch has a peak molecular weight of equal to or more than 3×10.sup.3 and equal to or less than 5×10.sup.4, (3) a degree of swelling in cold water at 25° C. is equal to or more than 5 and equal to or less than 20, and (4) a content on a sieve having a mesh size of 0.075 mm and under a sieve having a mesh size of 0.5 mm is equal to or more than 30% by mass and equal to or less than 100% by mass.

Approach for processing marble-like beef
The disclosure discloses a production method of marbled beef, and belongs to the field of food processing. The processing steps of the method are: freezing, thawing of beef, preparation of a gel emulsion, injection, wrap shaping, quick freezing, cutting and packaging, and hot dipping. The preparation method of the process of the disclosure can realize high-efficiency and standardized industrial production. By injecting beef with the formulated gel emulsion, the fat content and high-quality protein content of the beef can be increased, thereby improving the sensory properties and flavor of the beef, and producing high-quality beef. The gel emulsion for preparing marbled beef of the disclosure is liquid and is low in viscosity when the temperature is higher than 40° C., and therefore the gel emulsion is convenient for injection into beef, and can be uniformly dispersed in beef to form a delicate marble pattern. When the temperature is lower than 20° C., the gel emulsion forms a solid in beef tissue. The beef prepared according to the method of the disclosure shows a white fat pattern at low temperature (0-25° C.), and is closer to natural marbled beef in appearance and structure.
EDIBLE AND FLAMMABLE FOOD PRODUCT
The presently disclosed subject matter is generally directed to an edible food product that can be readily burned as a fuel source, such as during camping or hiking. The term “edible” refers to a material that that can be ingested and that is safe for humans to eat. Particularly, the disclosed food product comprises one or more types of nuts, wafers, and/or sweeteners. The ingredients give the food product a high level of nutrition, providing energy and calories for use during a wide variety of activities (e.g., hiking). In addition, the disclosed food product is flammable, and easily burn or be set on fire, such as for use as a fuel (e.g., heat) source.
Method for producing fried noodle lump
[Problem to be Solved] There is provided a fried noodle lump which is prevented from being inverted in a cup by external shock in a state where the fried noodle lump is stored in a cup-shaped container. [Solution] The shape retention of a bottom end portion of the fried noodle lump is secured by storing a group of noodle strings after gelatinization in a retainer and frying the lower end portion of the group of noodle strings. Accordingly, the fried noodle lump can be prevented from being inverted in a cup by external shock in a state where the fried noodle lump is stored in a cup-shaped container. Further, it is preferred to include a step of immersing the whole of the group of noodles strings in a fry oil, after the step of securing the shape retention of the bottom end portion of the fried noodle lump.
DEEP FRY COATING MIX
Disclosed is a deep fry coating mix with which it is possible to produce deep-fried food whose coating has a good and crispy texture and maintains the good texture even after a certain period of time has elapsed after production. The deep fry coating mix contains 30 to 70% by mass of starch with a degree of swelling of 10 or less, and 30 to 70% by mass of a water-soluble dietary fiber. It is preferable that the water-soluble dietary fiber is one or more selected from the group consisting of inulin, indigestible dextrin, and β glucan. The deep fry coating mix is particularly useful as a coating powder or for preparing a batter liquid.
SPECTROSCOPIC EVALUATION OF EDIBLE OIL USING PROFILES
A characteristic of edible oil may be evaluated using a spectrometer. For example, optical reflectance data may be obtained from edible oil in situ in a frying apparatus housing the edible oil, the reflectance data corresponding to a specified range of infra-red wavelengths. A model profile corresponding to the characteristic being assessed may be obtained, such as from a repository housing a secured library of such profiles. The model profile may define a regression vector for use in transforming the reflectance data to generate a value corresponding to the characteristic being assessed. A criterion may be applied to the value to establish a simplified representation of the characteristic for presentation to a user for assessment of oil quality.
