PROCESS FOR IMPROVING THE ORGANOLEPTIC AND NUTRITIONAL PROPERTIES OF LEGUME MEAL AND COMPONENTS AND DERIVATIVES THEREOF
Process for the production legume meal comprising the steps of: a) providing a wet heat treatment reactor comprising a cylindrical tubular body (1) with horizontal axis, having an opening (5, 6, 10) for the introduction of legume meal and water or an aqueous solution and having at least one discharge opening (7), a heating jacket (4) and a rotor (8) arranged inside the cylindrical tubular body; b) feeding a continuous flow of meal into the reactor, in which the rotor (8) is rotated at a speed greater than or equal to 150 rpm; c) feeding into the reactor, together with the flow of meal, a continuous flow of water or aqueous solution, which is dispersed into minute droplets; d) centrifuging the aforementioned flows against the inner wall of the reactor, thus forming a highly turbulent, dynamic, thin tubular fluid layer, while advancing in substantial contact with the inner wall of the reactor towards the discharge opening (7); e) discharging from the discharge opening (7) a continuous flow of a wet meal (moisture content 20-40%); f) providing a thermal dehydration and treatment reactor, comprising a cylindrical tubular body (101) with horizontal axis, having at least one inlet opening (105) and at least one discharge opening (107), a heating jacket (104) and a rotor (108) arranged inside the cylindrical tubular body (101) and comprising a shaft provided with elements (109) projecting radially therefrom; g) feeding the wet meal into the thermal dehydration and treatment reactor, the inner wall of the reactor being kept at a temperature of at least 100 C. and the rotor (108) being rotated at a speed of at least 150 rpm; h) centrifuging and causing the wet meal to advance inside the reactor by the action of the rotor (108); i) discharging from the discharge opening (107) of the reactor a continuous flow of legume meal having a moisture content of between 2% and 15%.
Low bitter chicory products
The present invention provides a food product comprising at least 1.5%, 5%, 10%, 20%, 30%, or more, by weight total ingredients of a low bitter chicory plant material or flour. The present invention also provides a method for obtaining a chicory product with reduced bitterness, comprising blanching chicory roots or root chips, drying the blanched chicory root chips, and optionally grinding the dried chicory root chips and incorporating it into flour, dough, or other food products. Also provided is a method for obtaining a chicory taproot with reduced bitterness, comprising cultivating a chicory plant at a soil nitrogen level of 150 lbs per acre or less in the upper 3 feet of the soil.
LOW BITTER CHICORY PRODUCTS
The present invention provides a food product comprising at least 1.5%, 5%, 10%, 20%, 30%, or more, by weight total ingredients of a low bitter chicory plant material or flour. The present invention also provides a method for obtaining a chicory product with reduced bitterness, comprising blanching chicory roots or root chips, drying the blanched chicory root chips, and optionally grinding the dried chicory root chips and incorporating it into flour, dough, or other food products. Also provided is a method for obtaining a chicory taproot with reduced bitterness, comprising cultivating a chicory plant at a soil nitrogen level of 150 lbs per acre or less in the upper 3 feet of the soil.
System and method to produce maple syrup
The process of producing maple syrup from maple sap can include concentrating the maple sap to a sugar content of between 30 and 50 Brix using membrane filtration, including increasing a differential pressure of the membrane filtration in accordance with an increasing of an osmotic pressure as the sugar content increases to eventually reach the sugar content of between 30 and 50 Brix; and subjecting the concentrated maple sap having a sugar content of between 30 and 50 Brix to evaporation until it transforms into maple syrup.
Water and energy saving process for making whole grain and whole gluten-free grain flour
A water saving and energy saving process the continuous production of whole grain flour and whole gluten-free flour is provided. The process includes preconditioning whole-grain or seed with water and uses an energy efficient blanching treatment with saturated steam. The process also provides flour having a bimodal size mixture of material having improved viscosity. The whole grain and whole gluten-free flour can be used to prepare grain products and baked foods.

DE-FLAVORED PEA PROTEIN CONCENTRATES AND METHODS OF MANUFACTURE
This specification discloses methods for removing unwanted flavors from legume protein concentrates, which are powdered legume compositions that have been classified to increase the protein compared to the protein content of the base legume. In at least some embodiments the methods are used to make de-flavored pea protein concentrates. Advantageously, the methods are selected to minimize damage to the de-flavored legume protein concentrates by reference to percent change of denaturation enthalpy compared an untreated legume protein concentrate.

An object of the invention is to provide a beer-taste fermented malt beverage with an alcohol concentration of less than 1% (v/v), which is excellent in robust feeling of drinking, excellent in sweetness in harmony with sourness, and has beer-like flavor. The means for solving the problems is a beer-taste fermented malt beverage containing a wort fermented liquid, having a real extract concentration of 3.5% (w/w) or more, and an alcohol concentration of less than 1% (v/v).
