METHOD FOR PRODUCING INSTANT NOODLES
[Problem to be Solved]
The present invention reduces usage of sodium chloride by adding magnesium chloride, and overcomes problems occurring in using magnesium chloride.
[Solution]
The present inventors have found that when magnesium chloride is added instead of sodium chloride to noodle strings and a reducing sugar is further added, preferable well-cooked feeling and appearance are imparted in subsequent production process for instant noodles, and thus, the present invention was accomplished. Specifically, the present invention relates to noodle strings for use in production of instant noodles, the noodle strings containing a raw material powder, magnesium chloride and a reducing sugar.
Nutritional Cereal-based Food with Low Glycemic Load and Processing Method thereof
The disclosure discloses a nutritional cereal-based food with low glycemic load and processing method thereof, and belongs to the technical field of processing of healthy foods. According to the disclosure, bulk grain crops are used as raw materials and mixed with a natural plant extract with the content of 3-deoxyanthocyanidin more than 3 mg/100 g and a sulfur-rich plant or animal protein, so that in-situ encapsulation of starch granules is achieved through an interaction of a sulfur-containing protein and 3-deoxyanthocyanidin, and a grain-source nutritional food for special dietary uses with low GI. According to the method of the disclosure, not only is the process environmentally friendly, operation procedures are simple, but also slow release of blood glucose after a meal is achieved by using the product, and the product can be used as a meal replacement food for people with abnormal glucose metabolism and the like.

FOOD FREEZING DEVICE, FOOD FREEZING METHOD AND FROZEN FOOD
To provide a food freezing device, a food freezing method, and a frozen food with which an eating quality as before quickly frozen can be obtained even when foods such as cooked rice foods and noodles are quickly frozen.
A food freezing device 400 of the present invention includes: a freezing tank 410 that stores an ice slurry S in a state of being maintained at equal to or less than −10° C.; a hanger 431 that holds an α-starch-containing frozen food F in the ice slurry S stored in the freezing tank 410; an ice slurry supply means (420, 450, 456, and 300) for supplying the ice slurry into the freezing tank 410; and a flow means (130) for causing the ice slurry to flow such that the ice slurry S collides with the frozen food F at equal to or greater than a predetermined relative speed. The frozen food F is a cooked rice food such as nigiri sushi or noodles such as udon noodles that contain a large amount of α-starch.

SOLID PASTE COMPOSITION FOR COOKING AND METHOD FOR PRODUCING SAME
A solid paste composition for cooking, which has elasticity, suppresses a rubber-like texture, and has a good chewy texture. The solid paste composition satisfies containing 2.0 mass % or more of an insoluble dietary fiber in terms of dry mass, 15 mass % or more of a starch in terms of dry mass, and 5.5 mass % or more of a protein in terms of dry mass. The solid paste composition further satisfies at least either of the ratio of the number of CBB-stained sites having an area of at least 200 μm.sup.2 and a roundness coefficient of at least 0.3, to the number of CBB-stained sites being 3% or more, and the ratio of the total area of CBB-stained sites having an area of at least 200 μm.sup.2 and a roundness coefficient of at least 0.3, to the image area of a cross-section of the composition being 0.3% or more.
METHOD AND MACHINE FOR AGING A NOODLE STRIP
When a sheet of plastic wrap is wound around noodle strips, a folded portion of the sheet of plastic wrap is held between layers of the noodle strip and is double wound on an outer side of the noodle strip. The sheet of plastic wrap covers an entirety of the wound noodle strip. The sheet of plastic wrap on an outer peripheral side of the folded sheet of plastic wrap extends from and is wound around a next noodle strip. Next, another folded portion of the sheet of plastic wrap is held between layers of the next noodle strip and is double wound on an outer side thereof. The sheet of plastic wrap sequentially covers an entirety of the next noodle strip.
