A method is disclosed for making palatable methionine-restricted foods, to deliver a methionine-restricted diet to human or veterinary patients. A protein or a food product containing protein is partially oxidized, preferably with ozone, to oxidize nearly all of the methionine and cysteine. After oxidation, tryptophan and lysine are optionally added back since they tend to be oxidized also. Optionally, a small amount of methionine is also added back so that the final methionine is within a preferred range of about 0.85 to about 1.8 gram methionine per 100 gram total protein, preferably about 1.2 gram per 100 gram total protein.

A method is disclosed for making palatable methionine-restricted foods, to deliver a methionine-restricted diet to human or veterinary patients. A protein or a food product containing protein is partially oxidized, preferably with ozone, to oxidize nearly all of the methionine and cysteine. The present invention concerns a process for producing a dry cereal composition, comprising (a) fermenting phytic acid containing cereals by phytase-positive lactic acid bacteria at a temperature below 45° C., until a pH of at most 5.9 is reached, (b) heating the fermented cereals obtained in step (a) to a temperature in the range of 40-55° C., for a period of at least 1.5 h; (c) drying the fermented and phytase treated cereals originating from step (b) to obtain the dry cereal composition. The present invention is ideally suited to reduce the phytate content of fermented cereals, thereby increasing the bio-availability of minerals. The invention further contains the dry cereal composition obtainable by the process according to the invention, especially having a molar ratio of phytate to iron of at most 1, and the use thereof in increasing the bio-availability of minerals.

The seed of rice produced from resveratrol-enriched transgenic rice into which resveratrol synthase genes are inserted, containing high a concentration of resveratrol of the present invention exhibits remarkably superior effects compared to when the same amount of resveratrol is simply ingested. Further, since rice is produced in the form to be used directly as food without an additional process of separating or extracting resveratrol, it may be widely used as food, feed, and medical supplies for preventing and improving a metabolic disease.

[Problem]

It is an object of the present invention to provide an oil and fat composition for rice cooking, which can suppress hardening of boiled rice during chilled storage and with which boiled rice with reduced odor specific to rice species in Indica rice or the like can be cooked, by adding the composition when cooking raw rice.

The present invention is an oil and fat composition for rice cooking, characterized by containing oils and fats as well as 0.1% to 3% by mass of lecithin and 0.002% to 1% by mass of ascorbic acid analog compound.
