VINEGAR DRIED WITHIN A NATURAL CARRIER
A solid vinegar powder and a method to generate the solid vinegar powder is described. The powder comprises an amount of acetic acid in a range of approximately 5% to approximately 50%, an amount of malted wholegrain seed or flour in a range of approximately 50% to approximately 95%, and at least 1% of nutritional components from the malted wholegrain seed or flour that includes fats, proteins, minerals and fibers. The solid vinegar powder is free from an addition of maltodextrin, dextrin, sodium diacetate, and/or modified starch.
OIL-IN-WATER EMULSION CONTAINING WHEAT FLOUR AND PHYSICALLY MODIFIED STARCH
The present invention relates to a composition in the form of an oil-in-water emulsion, containing wheat flour and physically modified starch. The invention also relates to a method for preparation of the composition.

The present invention “Production process of nixtamalized maize flour, nixtamalizing the maize fractions separately without producing nejayote”, considers the integration of the processes: Semi-humid milling of the maize (fractionated degerm), extruding of the maize fractions and milling-instant dehydration of the different nixtamalized and extruded maize fractions, has as novelty the way in which the nixtamalization process is carried out and the objective is to provide a nixtamalized maize flour production system that reduces the residues from the maize grain and completely eliminating nejayote production.

Wheat grain (Triticum aestivum) comprising an embryo and starch, wherein the embryo comprises two identical alleles of an SBEIIa-A gene, two identical alleles of an SBEIIa-B gene and two identical alleles of an SBEIIa-D gene, wherein each of the SBEIIa genes gives rise to an amount of protein (w/w) or a protein having SBEIIa activity which is lower than the corresponding wild-type gene, and at least one of said genes comprises a point mutation, wherein the starch comprises amylose such that the grain has an amylose content of at least 50% (w/w) as a proportion of the extractable starch of the grain.
Wheat with new alleles of RHT-B1
The present invention provides a wheat plant comprising an Rht-B1 allele which encodes an Rht-B1 (DELLA) poly-peptide. Grain from a near-isogenic wheat line comprising the dwarfing Rht-B1c allele was subjected to sodium azide mutagenesis. Plants exhibiting early leaf elongation rates or mature plant height greater than the dwarf parent were selected and the Rht-B1 gene sequenced. This identified 35 mutated alleles of Rht-B1c. Similar methods were also used to identify mutant alleles of the dwarfing s1n1d allele in barley, where DELLA is encoded by the s1n1 gene.

Described herein is a corn protein product, comprising a first fraction comprising 75 wt % to 95 wt % (dry solids) protein and a second fraction comprising 60 wt % to 80 wt % (dry solids) protein, wherein the first fraction is a zein-enriched fraction and the second fraction is a zein-depleted fraction and a method of achieving the same. Further described herein is a corn protein product derived from destarched corn gluten meal comprising a first fraction comprising 78 wt % to 83 wt % (dry solids) protein and a second fraction comprising 70 wt % to 80 wt % (dry solids) protein, wherein the first fraction is a zein-enriched fraction and the second fraction is a zein-depleted fraction.
DRIED POWDER OF EDIBLE PLANT, FOOD AND BEVERAGE, AND PRODUCTION METHOD THEREFOR
A dried powder of an edible plant which hardly gets damped, without relying on a substance other than a dried edible plant serving as a main food material for imparting features to a flavor and a color tone of a dried powder, and a method for producing the same is provided. The dried powder contains an edible part and a non-edible part of a dried edible plant which a proportion of the non-edible part to the edible part of the dried edible plant is 1% by mass or more and 200% by mass or less, a repose angle is 0.7 rad or more, loose bulk density/tight bulk density is 0.88 or less and a moisture content is 20% by mass or less.
REMOISTENING OF THERMALLY INHIBITED STARCH AND/OR FLOUR
Disclosed is a process for the treatment of a raw material containing thermally inhibited starch and/or thermally inhibited flour as its largest constituent, whereby the moisture content of the raw material is at most 8 wt. %, including a remoistening step wherein between 0.1 and 30 wt. % of an aqueous phase is added to the raw material to form a product containing remoistened starch and/or remoistened flour.
