A soy milk producing device is provided, including: a suction apparatus, at least one feeder, at least one first grinding and filtering apparatus, a mixing barrel assembly and at least one second grinding and filtering apparatus. Each feeder has a first inlet for introducing fluid. Each second grinding and filtering apparatus is configured for grinding and filtering a mixed fluid of soy dregs and water to produce secondary soy fluid from the mixed barrel assembly; during a first soy milk production cycle, the fluid first inlet portion of at least one said soybean feeding machine is water; wherein the fluid in producing the first soy fluid is water; each of the at least one first grinding and filtering apparatus is further configured to grind and filter the soy beans with the secondary soy fluid to produce a thick soy fluid.

Lactobacillus Acidipiscis, Fermented Soymilk, and Preparation Method and Use Thereof
The present disclosure relates to the technical field of microorganisms and fermentation, and specifically discloses a Lactobacillus acidipiscis, a fermented soymilk, and a preparation method and use thereof. Lactobacillus acidipiscis HAU-FR7 is disclosed with a deposit number of CGMCC NO. 19253. The Lactobacillus acidipiscis HAU-FR7 is a facultative anaerobe that can reduce soy isoflavones, and the Lactobacillus acidipiscis HAU-FR7 can not only grow under aerobic conditions, but also convert daidzin and genistin distributed in the soymilk into DHD and DHG under aerobic conditions. Moreover, the Lactobacillus acidipiscis HAU-FR7 has stable conversion capacity, and solves the problem of shortage of facultative anaerobes in the research and development of soy functional foods. The DPPH radical-scavenging capacity of DHD and DHG is significantly higher than that of daidzein and genistein. Therefore, the discovery of the Lactobacillus acidipiscis HAU-FR7 will greatly promote the development and utilization of functional fermented soy products.
MOUTHFEEL MODULATION IN REDUCED AND SUGAR-FREE BEVERAGES USING A BLEND OF PECTIN AND XANTHAN GUM
This disclosure provides novel compositions comprising a pectin, a first xanthan gum, and optionally a second xanthan gum. These compositions are useful for improving mouthfeel properties of non-nutritive sweeteners, such as steviol glycosides and blends thereof, in food and beverages containing the same.

Method (1) for preparing a milk-containing beverage containing speculoos (8), consisting of the following steps:—removal of the milk fat fraction (5) from the milk by centrifugation or churning,—grinding of speculoos (2) into speculoos powder (4) dispersion of fine speculoos powder (4) in the milk fat fraction (5) of the whole milk (3) by mixing the milk fat fraction and the speculoos powder at high speed in a dispersing mixer (10), a high-friction disperser (12) or in a. disintegrator/dissolver (21);—adding the resulting dispersion (6) to skimmed milk (7) or low-fat milk in a proportion that restores or approximates the original milk fat content in the whole milk (3); intensely mixing the dispersion (6) with the skimmed (7) or low-fat milk to a stable dispersion of the speculoos powder (4) in the milk.
MILK SUBSTITUTE
The invention is directed to a method of preparing a milk substitute from starch and protein that are first isolated from a root, tuber, cereal, nut or legume. The method comprises preparing an emulsion comprising at least 0.3 wt. % of emulsifying agent (native protein and optionally emulsifying starch), at least 0.2 wt. % denatured protein, and at least 1.0 wt. % of lipid. By first isolating the starch and protein from the plant source and then at a later step recombining these in the desired form and quantities, the invention allows for more control of the final composition and organoleptic properties of the milk substitute.
