FAT- OR OIL-PROCESSED STARCH

There is provided a fat-processed starch which has excellent dispersibility in food raw materials such as batter and excellent adhesion to ingredients and the like and provides a good texture. The fat-processed starch of the present invention can be obtained by adding a fat composition having an iodine value of 125 to 170 and containing 35 ppm to 8,000 ppm of a polyphenol to a starch to mix the starch and the fat, and aging the starch mixture. The content of the fat composition preferably ranges from 0.01% to 5%, and the starch is preferably tapioca starch.

SOLUBLE FLOUR AND METHODS OF MANUFACTURING SAME

Described herein is a method of manufacturing a soluble flour comprising preparing a flour-water slurry, adjusting the pH of the slurry to a pH ranging from 3.5-6, adding an enzyme to the pH adjusted slurry in an amount ranging from 0.02-2.0 g enzyme/g flour to form a reaction mixture, cooking the reaction mixture at a temperature ranging from 60-140 C until a dextrose equivalent of 5 to 18 is achieved, inactivating enzyme to obtain a soluble flour; and adjusting pH of the soluble flour to range from 4-5. The soluble flour obtained has a dextrose equivalent value ranging from 5 to 18, a solubility greater than 50% (at 5% solids), and a viscosity between 0.001 and 1.0 Pa* at temperatures ranging from 20-50 C (at 10% solids).

BAKED GOODS CONTAINING PREGELATINIZED WAXY CASSAVA STARCH

Disclosed herein are baked goods with improved properties that contain pregelatinized waxy cassava starch, and methods of making such baked goods. In some embodiments the baked goods comprise between 1% and 10% by weight waxy cassava starch. In embodiments the baked goods have equal or better crumb firmness than baked goods using chemically modified starches.

PLANT-BASED PRODUCT AND PROCESS

A process for producing a plant-based food product includes providing a suspension including starch and protein, heating the suspension to obtain a warm suspension, preparing a suspension including partly hydrolyzed starch by treating the warm suspension with at least one starch degrading enzyme, subjecting the suspension including partly hydrolyzed starch to heat treatment to obtain a heat-treated suspension including the partly hydrolyzed starch, cooling the heat-treated suspension, and fermenting and/or acidifying the suspension including the partly hydrolyzed starch, and further cooling and/or adding jam, beta-glucan, flavoring and/or additives to said suspension, and obtaining a plant-based food product.

FOOD PRODUCTS THAT CONTAIN LOW FAT, CONCENTRATED HEMP PROTEIN, AND RELATED METHODS
20200281244 · 2020-09-10 ·

Described are food compositions including doughs, extrudates, and finished puffed food compositions derived therefrom. The food compositions contain hemp protein, non-hemp protein, and starch. Such a food composition contains at least 40 weight percent total protein and less than 10 weight percent total fat, based on total weight of the food composition on a dry basis. Advantageously, the finished food product has a surprisingly crunchy texture. Additionally, the finished food product has improved storage stability as compared to compositions having greater levels of hemp fat.

PLANTAIN FOOD PRODUCT AND PROCESSES FOR PRODUCING PLANTAIN FOOD PRODUCT
20200113213 · 2020-04-16 ·

The invention comprises various embodiments of processes by which cookable food product may be prepared and the consumable product that may be made through the uses of those processes. Advantageously, a food product may be made through the processes that is lower starch and more nutritious than food product made through conventional food processes. The system and methods may be used to make a cookable food product and a consumable food product from plantain or another type of starchy fruit or vegetable.

Starch Extraction

The present invention relates to a process for extraction of cassava starch. Particularly, the present invention relates to a process for extraction of cassava starch with a device. More particularly, the present invention relates to a process for extraction starch with a device and one or more enzymes.
