Cellulose derivatives comprising a hydroxyethyl group, such as hydroxyethyl methyl cellulose, are used as foam control agents in foodstuff processing. The cellulose derivatives are biodegradable while still providing excellent foam control capacity. In addition, cellulose derivatives foam control agents of the disclosure can be used with various apparatus while avoiding forming films that otherwise affect apparatus function. SHELF STABLE POTATO PRODUCT
A shelf stable potato/sweet potato french fry product packaged in a hermetically sealed flexible bag/pouch without the need for a surrounding acidic solution has been disclosed. Such product has a lower pH, preferably below 4.6, with enhanced taste and texture profile features, such as: (a) 0% -2% fat content, (b) a hardness of the exterior layer between 350 gram to 2500 gram after frying, that allows for little to no need for battering of such products, and (c) a moisture content above 55%. These benefits are typically obtained by processing the pre-cut potato via a single-step processing technique which may or may not require pre-processing steps.
Water-soluble polysaccharide derived from root vegetable and method for producing same
The purpose of the present invention is to provide a water-soluble polysaccharide which is less expensive and enables the production of an acidic protein food or drink, said acidic protein food or drink being stable in an acidic pH range at the isoelectric point of protein or higher, even by using a starting material such as a root vegetable. A water-soluble polysaccharide, which is extracted from a starting material derived from a root vegetable in a wet state with hot water under acidic conditions of pH 2.7-3.7, can well stabilize an acidic protein food or drink in a pH range at the isoelectric point of protein or higher.

Further, the alkyl ether amines are water soluble and therefore can be readily removed from the food processing system.

The profood item micropellet may be prepared using an extrusion process and coated with a coating process to form a shell.
