A beverage dispenser uses-high ratio concentrates to mix on-demand beverages. The high-ratio concentrate is pre-mixed with an alkaline water to allow for improved blending performance in the final beverage. The beverage recipe may be customized by the user to suit personal tastes. Aspects of the beverage dispenser also may include the ability to dispense room temperature, chilled, heated, sparkling, or highly alkaline beverages. Operation of a user interface to receive a beverage order includes the ability to display and employ user interfaces present on both a display on the beverage dispenser and an application on a mobile device. In some aspects, both user interfaces may be used simultaneously to receive user input. Methods of dispensing a beverage using the beverage dispensing systems are also discussed.

In one aspect, a method for controlling a beverage dispensing apparatus may include: a) determining whether a first beverage to be prepared at a first temperature or a second beverage to be prepared a second temperature has been selected for preparation, the first temperature being greater than the second temperature; and b) selecting a maximum pressure threshold for a beverage preparation fluid circuit of the beverage dispensing apparatus based on whether the first beverage or the second beverage has been selected in step a), wherein the maximum pressure threshold is set by selecting from at least a first pressure threshold when the first beverage has been determined to have been selected and a second pressure threshold when the second beverage has been determined to have been selected, the first pressure being less than the second pressure.

A beverage-making apparatus includes a fermentation tank assembly including a fermentation tank having an opening formed therein and a fermentation tank cover configured to open and close the opening. The beverage-making apparatus also includes a refrigeration cycle apparatus including a compressor, a condenser, an expansion device, and an evaporator. The refrigeration cycle apparatus is configured to circulate a refrigerant therethrough and to control a temperature of the fermentation tank as the evaporator is disposed at the fermentation tank. The beverage-making apparatus further includes a heat insulating wall surrounding both the fermentation tank and the evaporator.

Implementations of the present disclosure are directed to dispensing beverages from a beverage dispensing machine and include determining, from computer-readable media, pour parameters for a beverage of a plurality of beverages, the pour parameters being specific to the beverage, at least one pour parameter including a tilt value, and automatically, by the beverage dispensing machine: rotating a drum that holds a vessel to achieve the tilt value, initiating dispensing of the beverage into the vessel from a tap, automatically rotating the drum to reduce the tilt value of the vessel during dispensing of the beverage, and ceasing dispensing of the beverage into the vessel from the tap, the tilt value being substantially zero upon ceasing.
