GLUCOSYL STEVIA COMPOSITION
Glucosyl Stevia compositions are prepared from steviol glycosides of Stevia rebaudiana Bertoni. The glucosylation was performed by cyclodextrin glucanotransferase using the starch as source of glucose residues. The compositions mainly comprise glucosyl derivatives with superior taste characteristics and can be used as sweetness enhancers, flavor enhancers and sweeteners in foods, beverages, cosmetics and pharmaceuticals.
HONEY TRUFFLE SWEETENER (HTS) VARIANTS
Fungal sweet-taste modifying protein variants (designated Honey Truffle Sweetener (HTS) protein variants), and polynucleotides encoding the protein variants are described. Food or beverage with increased sweetness
A food or beverage having (a) a natural sugar in an amount corresponding to a sweetness intensity X1, (b) a high-intensity sweetener in an amount corresponding to a sweetness intensity X2, and (c) less than 40 mg/100 ml of sodium, wherein (1) ingredients (a) to (c) exhibit a sweetness intensity X3 is exhibited by the, and (2) energy is 50 Kcal/100 ml or less, and wherein 0.1<(X1+X2)<X320 is satisfied. SWEETENER BLEND COMPRISING THAUMATIN AND BRAZZEIN
The invention provides a sweetener or flavor modifying composition comprising Thaumatin and Brazzein.
Sweeteners
The present disclosure relates, at least in part, to compositions (e.g., formulations) comprising a steviol glycoside. Rebaudioside M (Reb M), combined with brazzein that have improved caloric profile as well as flavor, taste and/or mouthfeel. In some embodiments, the composition further comprises one or more additional sweeteners.
