[Object]

It is intended to provide a crystalline maltitol powder less prone to consolidation, which is free from the formation of a lump during delivery or storage thereof, does not require pulverization or re-classification in use, is easy to handle in transfer, package opening, addition or mixing to another food material, and so on, and allows for automated transportation and so on.

[Means for Solving the Object]

The crystalline maltitol powder less prone to consolidation is obtained by charging crystalline or powdery maltitol into a shelf type dryer, a tunnel-type dryer, a cylindrical container, or the like and subjecting the equipment or container to a treatment wherein an air having a temperature of 30 to 33 C. and a relative humidity of 5% is allowed to flow into the equipment or container from one side thereof and withdrawn out of the other side thereof at a space velocity of 11 to 12 for consecutive 24 hours. Even when the relative humidity is 45%, the crystalline maltitol powder less prone to consolidation can be obtained by combining therewith other conditions such as an appropriate space velocity of the feed of air and an appropriate treatment duration.

Highly soluble stevia sweetener

A method for making highly soluble Stevia sweetener compositions is described. The resulting sweetener compositions readily provide high concentration solutions, and also possess superior taste qualities. The compositions can be used as sweeteners, sweetness enhancers, and flavor enhancers in foods, beverages, cosmetics and pharmaceuticals.

Syrup purification by capacitive deionization

The invention relates to a process for purifying syrups. The process comprises removing charged components from the syrup by passing said syrup through a capacitive deionization cell. The present invention further relates to the use of capacitive deionization to recover charged components from syrups. In particular the syrups are mannose, fructose and sorbitol containing syrups.

HIGHLY STABLE AERATED OIL-IN-WATER EMULSION

The invention relates to an oil-in-water (O/W) emulsions that can be aerated to produce foamed emulsions. More particularly, the present invention relates to an aeratable or aerated O/W emulsion comprising a continuous aqueous phase and a dispersed oil phase, said emulsion containing: 25-55 wt. % water; 4-50 wt. % oil; 3-12 wt. % of cyclodextrin selected from alpha-cyclodextrin, beta-cyclodextrin and combinations thereof; 20-60 wt. % of saccharides selected from monosaccharides, disaccharides, non-cyclic oligosaccharides, sugar alcohols and combinations thereof; 1-20 wt. % of polysaccharides; 0-30 wt. % of other edible ingredients; wherein the saccharides are contained in the emulsion in a concentration of at least 60% by weight of water and wherein the polysaccharides are contained in the emulsion in a concentration at least 2% by weight of water. The O/W emulsions of the present invention are capable of forming foamed emulsions with high firmness and excellent shape retaining properties. These foamed emulsions further offer the advantage that they exhibit excellent stability.
