FAT-FREE FOOD PRODUCT
Embodiments of the invention provide a fat free food product and method of making. In some embodiments, the food product is bouillon. The fat free food product is anhydrous, and contains a protein and a zero-fat binder. The binder includes a starch, an edible polyhydric alcohol, and a gum. The fat free food product has a protein content of 1.15% to 4.5% w/w. The food product contains no added fat.

Embodiments of the invention provide a solid food product, made with a fat free binder and a method of making. The binder includes a starch, an edible polyhydric alcohol, and a gum. In some embodiments, the food product is bouillon.
HEALTHY SWEETENER
Food and/or beverage additives are generally provided. In some embodiments, the additive comprises a sweetener (e.g., a healthy sweetener). The additives and/or sweeteners described herein may be useful when added a food and/or beverage e.g., to increase the sweetness of a food and/or beverage. In some embodiments, the additives and/or sweeteners may advantageously be used to reduce the sugar and/or caloric content of a food and/or beverage e.g., as compared to the food and/or beverage without the additive and/or sweetener or containing conventional sweeteners. Advantageously, the additives comprising the sweeteners described herein may be useful for providing a food and/or beverage having a relatively low glycemic index and/or a relatively low number of calories per serving.
Enzymatic synthesis of soluble glucan fiber
An enzymatically produced soluble ?-glucan fiber composition is provided suitable for use as a digestion resistant fiber in food and feed applications. The soluble ?-glucan fiber composition can be blended with one or more additional food ingredients to produce fiber-containing compositions. Methods for the production and use of compositions comprising the soluble ?-glucan fiber are also provided.

The present invention relates to a protein bar that is formed from a moldable mixture containing proteins and/or protein hydrolysates. The moldable mixture contains a collagen hydrolysate having an average molecular weight of up to 1,700 Da as a protein hydrolysate.
REVERSIBLE EDIBLE FILM, USES AND METHOD OF PRODUCTION
The present invention relates to a reversible edible film with dual functionality comprising 1) a mixture of anionic carboxymethylcellulose (CMC) sodium salt, with a viscosity of less than 50 cp, in a concentration between 0.5 and 10% by weight, and at least another polysaccharide, in a concentration between 0.1 and 5% by weight, and glycerin, in a proportion between 1 and 20% by weight, 2) a sauce or marinating liquid, in a proportion between 20:80 and 80:20 with respect to the mixture, and 3) spices, where the film has two differentiated sides: Side A, whose surface is coated with spices, and Side B, composed of the polysaccharide mixture, glycerin, and sauce or marinating liquid. The present invention also contemplates the method of obtaining the film, as well as its different applications.

Safflower oil emulsion as dietary supplement and preparation thereof
Novel safflower oil emulsion and method of preparation. The safflower oil is 100% all natural, non-genetically modified organism (GMO), expeller pressed, solvent free, linoleic fatty acid rich oil wherein the linoleic fatty acid content is in a range from approximately 70% to approximately 80% of the total safflower oil that is mixed with a purified water and a mixture of at least one of an emulsifier, a flavoring, a natural sweetener, a natural coloring agent, and a gum. The mixture is blended to provide a stable emulsion that has the rich taste of a nutritious fruit smoothie that increases metabolism to support a healthy weight management program. The resulting dietary supplement is bioavailable and easily absorbed by the consumer of the emulsified safflower oil dietary supplement.
