The present invention relates to a composition and a product which are used when cooking food containing carbohydrates and proteins as main ingredients, when cooling processed food such as ramen, when preparing vegetable protein food such as tofu, or when administering alcoholic beverages, coffee, tea, beverages and the like, so as to increase the elasticity, texture or taste of prepared or cooked food, thereby improving the flavor thereof.
Hydration for animals
The invention provides composition and methods for improving hydration and water intake in an animal. In one embodiment, a hydration composition can comprise water and a hydration additive, where the hydration additive consists essentially of a sugar alcohol and a protein, where the sugar alcohol includes glycerol and the protein includes whey. Additionally, a method of improving hydration and water intake in an animal can comprise administering the hydration composition with water to the animal.
Eutectic flavor systems
Provided is a liquid system comprising a first component and a second component the components selected from the group consisting of carbohydrates, sugar alcohols, food grade acids, food grade non-aqueous solvents and food grade salts wherein: a. the second component is different than the first component; b. the system has a melting point lower than each of the components; and c. the liquid system comprises 7% or less water. The systems are useful for protecting an active ingredient in a food system wherein the ingredient is stable at room temperature and retains its sensory properties after being diluted into an aqueous beverage for example to form a flavored aqueous beverage.
Edible composition suitable for lowering serum cholesterol
The present invention relates to an edible composition comprising plant sterol ester and/or plant stanol ester and triglyceride fat usable for lowering serum LDL cholesterol. The composition further comprises oligosaccharides and sugars. The composition can preferably be used in dietary supplements, fillings and toppings.
LAYER-BY-LAYER PRODUCTION OF 3-D SUGAR-BASED FOOD PRODUCTS
The invention relates to an aqueous binder liquid that can advantageously be used in the layer-by-layer production of 3-D sugar-based food products. More particularly, the invention relates to an aqueous binder liquid containing: (a) 50-70 wt. % water; (b) 12-30 wt. % sugar alcohol; (c) 5-20 wt. % short chain polyol selected from glycerol, propane-1, 2-diol and combinations thereof; and (d) 3-10 wt. % ethanol; wherein components (a), (b), (c) and (d) together constitute at least 90 wt. % of the aqueous binder liquid. The aqueous binder liquid of the present invention is particularly suitable for use in methods of layer-by-layer production of 3-D sugar-based food products in which the binder liquid is applied by means of piezo inkjet print heads. These methods enable the production of highly creative and complex patterns, such as cocktail toppers, edible logos and decorative wedding cake toppers. The invention further relates to a three-dimensional sugar-based food product that has been obtained by a layer-by-layer production method that employs the aforementioned aqueous binder liquid.

D-psicose/erythritol compositions comprise, in combination, D-psicose and erythritol as sweeteners together with one or more other edible ingredients. Comestibles are provided, including beverage products and other food products, comprising the novel D-psicose/erythritol compositions. D-psicose and erythritol may each be present in a comestible in a concentration sufficient independently of the other to perceptibly sweeten the composition. An additional sweetener component and other ingredients may be included in the formulation.

ENZYMATIC SYNTHESIS OF SOLUBLE GLUCAN FIBER
An enzymatically produced soluble α-glucan fiber composition is provided suitable for use as a digestion resistant fiber in food and feed applications. The soluble α-glucan fiber composition can be blended with one or more additional food ingredients to produce fiber-containing compositions. Methods for the production and use of compositions comprising the soluble α-glucan fiber are also provided.
Erythritol and Sucrose Coating
Dried coated food pieces are produced by applying a composition to a surface of food pieces to produce coated food pieces. The composition includes water and a soluble solids component having a soluble solids content including erythritol in an amount more than 10% and up to about 50% by dry weight of the soluble solid content and sucrose in an amount of about 50% and up to about 90% of the soluble solids content. No more than 10% by dry weight of the soluble solids content is other than erythritol and sucrose. The coated food pieces are dried to form dried food pieces having at least a partial coating. The coating includes at least a portion of the sucrose in crystal form and at least a portion of the erythritol in crystal form. The coating has a crystallinity of about 20% to about 60%.
