A coating includes erythritol in an amount of about 40% to about 70% by dry weight and a sprouted whole grain ingredient in an amount of about 10% to about 30% by dry weight. Also described are coated food pieces and methods of making coated food pieces using a novel coating.

A composition for coating confectionary and/or surfaces of food processing machines. The composition includes 60% to 99.09% by weight, based on a total amount of the composition, of an oil. The composition further includes 0.05% to 40% by weight, based on the total amount of the composition, of rice bran wax.
Edible films and coatings employing water soluble corn prolamin and other functional ingredients
A method of producing an aqueous solution of zein suitable for forming edible coatings includes combining zein with an alcohol-free, non-corrosive amphipathic carrier solvent (e.g., [1,3]-propanediol), and adding a surfactant (e.g., surfactin) thereto, forming a Phase I solution. The surfactant may be non-ionic or anionic as determined by the type of zein being used. The Phase I solution is combined with a Phase II aqueous solution including primarily water without alcohol to provide an aqueous coating solution of zein. A plasticizer (e.g., polyethylene glycol) or fatty acid (e.g., lauric acid) may be added to the Phase II solution to enhance the zein coating. The resulting coating solution may then be applied on food, and dried, to form an edible coating.
Multi-supplement food-additive
A fortified salt mixture includes sodium chloride salt grains and a multi-supplement food-additive admixed with the sodium chloride salt grains. The multi-supplement food additive includes particles, and each particle includes a core having a first supplement and a binder, a coating on the core, and a second supplement in the core and/or in the coating. A method for fortifying salt includes combining a first supplement, a second supplement, a binder and a coating to yield a multi-supplement food-additive; and admixing the multi-supplement food-additive with sodium chloride salt grains.
OIL DISPENSING SYSTEM FOR A POPCORN MACHINE
An oil distribution system for a food machine includes a first and second pump, a fluid junction, and a selector switch. The first pump includes first inlet and outlet ports. The second pump includes second inlet and outlet ports. The fluid junction includes first and second input ports and an output port. The first input port is fluidly coupled to the first outlet port. The second input port is fluidly coupled to the second outlet port. The output port is in fluid communication with the first input port and the second input port. The selector switch is configured to selectively activate either the first pump or the second pump. Activation of the first pump directs oil from the first outlet port to the first input port of the fluid junction. Activation of the second pump directs oil from the second outlet port to the second input port.
