Continuous Coating Method
Disclosed are methods and systems for continuously coating food pieces. The methods include a steps of directing and uncoated food stream through an enrober to apply a first coating to at least a portion of a surface of each food piece to form a coated stream and continuously redirecting a portion of the coated stream back through the enrober along with the stream of uncoated food pieces to apply at least one additional coating to the portion of the coated stream.

The methods include a steps of directing and uncoated food stream through an enrober to apply a first coating to at least a portion of a surface of each food piece to form a coated stream and continuously redirecting a portion of the coated stream back through the enrober along with the stream of uncoated food pieces to apply at least one additional coating to the portion of the coated stream.
RING FOR TOPPING PIZZA AND OTHER FOOD PRODUCTS
An apparatus for topping food products that have a peripheral edge and an upper surface, wherein the food products rest upon a pan with a peripheral edge. The apparatus includes an annular guide with an axis and a guide surface terminating at an inner edge defining a central opening. The guide surface is substantially non-parallel to the axis, and may form an angle between about 20 and 60 degrees with the axis. An annular skirt is mounted coaxially to the annular guide and is disposed adjacent the peripheral edge of the pan. The inner edge of the guide surface is disposed a first predetermined distance from the food product's upper surface and a second predetermined distance radially inwardly of the food product's peripheral edge, thereby causing toppings dropped onto the annular guide to be guided radially inwardly of the inner edge.

This process comprises the steps of: providing a mould (2; 102) having a mould cavity (S; S) that is delimited, at least partially, by at least one mobile wall (22B; 106); positioning the product (P) in said mould cavity by setting said outer side (p1) in a position facing and at a distance from said mobile wall (22); introducing granular material in the gap (24; 112) comprised between said mobile wall (22B; 106) and said outer side of said product; and moving said mobile wall (22B; 106) towards said outer side of said product so that it comes to press said granular material against said outer side (p1) of said product (P).
