Method and apparatus for reducing food products. The apparatus includes a casing, an impeller adapted for rotation within the casing, and a cutting device. The casing has axial and circumferential openings for product entering and exiting, respectively, the casing. The impeller includes a drum, paddles mounted to the drum, and pockets defined by and between adjacent pairs of paddles that are radially aligned with the circumferential opening of the casing as each pocket travels past the circumferential opening. The cutting device includes a knife disposed at the circumferential opening of the casing and oriented perpendicular to the axis of the impeller. The knife lies on a sector of the casing and has a cutting edge located within an interior of the casing so that the knife extends into the path of the paddles and passes through relief slots defined in the paddles as the impeller rotates.

A modular unit configured for mounting to a cutting head of a slicing machine and for securing a knife to the cutting head, and slicing machines equipped with one or more of such modular units. The modular unit includes mounting blocks adapted to be spaced apart in an axial direction of the cutting head, and a clamping assembly assembled with the mounting blocks so as to be between the mounting blocks. The clamping assembly is configured to secure a knife to the cutting head, and at least portions of the clamping assembly may be removable from the cutting head by disassembling the clamping assembly from the mounting blocks without removing the mounting blocks from the cutting head.
MODULAR UNITS, CLAMPING ASSEMBLIES, AND SLICING MACHINES EQUIPPED THEREWITH
A modular unit configured for mounting to a cutting head of a slicing machine and for securing a knife to the cutting head, and slicing machines equipped with one or more of such modular units. The modular unit includes mounting blocks adapted to be spaced apart in an axial direction of the cutting head, and a clamping assembly assembled with the mounting blocks so as to be between the mounting blocks. The clamping assembly is configured to secure a knife to the cutting head, and at least portions of the clamping assembly may be removable from the cutting head by disassembling the clamping assembly from the mounting blocks without removing the mounting blocks from the cutting head.

Size-reduction machines, feed units, and methods capable of producing reduced-size products from a variety of solid and semisolid materials. Such machines have an impeller that rotates on an approximately horizontal axis and an opening at an axial end of the impeller. A feed unit includes a feed hopper for feeding products to an interior of the impeller through the opening of the machine, and a slicing knife is mounted to the impeller and radially protrudes across the opening of the machine to slice products into segments as they enter the interior of the impeller.

Cutting system and anvil strip mounting apparatus and method
A method for cutting a moving source material including: rotating a cutting cylinder including a blade; positioning a structural member in spaced relation from the cutting cylinder, wherein the space between the cutting cylinder and the structural member receives the source material; and positioning an anvil in the space. The anvil engages the source material when it is displaced between the cutting cylinder and the structural member. The method also includes: directing the blade into contact with the source material, whereupon the source material is pressed against the anvil and is severed by the blade, and the anvil is displaced by the cutting blade from a first retracted position to a second activated position; and applying an increasing biasing force to the moving anvil as it is displaced toward the second activated position so as to direct the anvil back to its first retracted position.
Cutting system and anvil strip mounting apparatus and method
A method for cutting a moving source material including: rotating a cutting cylinder including a blade; positioning a structural member in spaced relation from the cutting cylinder, wherein the space between the cutting cylinder and the structural member receives the source material; and positioning an anvil in the space. The anvil engages the source material when it is displaced between the cutting cylinder and the structural member. The method also includes: directing the blade into contact with the source material, whereupon the source material is pressed against the anvil and is severed by the blade, and the anvil is displaced by the cutting blade from a first retracted position to a second activated position; and applying an increasing biasing force to the moving anvil as it is displaced toward the second activated position so as to direct the anvil back to its first retracted position.

The knife has a leading edge facing a direction of rotation of the cutting wheel and a large-amplitude corrugated shape characterized by peaks and valleys. The knife is secured to the hub and rim with a knife holder, and a clamp secures the knife to a first surface of the knife holder. The knife holder and knife are configured to provide continuous and accurate alignment of an individual food product throughout the slicing thereof by the knife of each knife assembly to produce food product slices with a generally parallel-cut cross-section having a uniform thickness and a large-amplitude periodic shape with an amplitude of 0.1 inch or greater.
