The producing method of the invention is simple, effectively improves the embedding rate of the oil-and-fat in the microencapsulated oil-and-fat, improves the stability of the oil-and-fat, and can prolong the shelf-life of a corresponding final product. The present invention also discloses a microencapsulated oil-and-fat produced by the method.
