LACTIC ACID BACTERIA COMPOSITION FOR PREPARING FERMENTED FOOD PRODUCTS WITH INCREASED NATURAL SWEETNESS AND FLAVOR
The present invention relates to a composition for producing a fermented milk product comprising (i) at least one Streptococcus thermophilus (St) strain, wherein the St strain is galactose-fermenting, wherein the strain carries a mutation in the DNA sequence of the glcK gene encoding a glucokinase protein, wherein the mutation inactivates the glucokinase protein or has a negative effect on expression of the gene, and (ii) at least one Lactobacillus delbrueckii subsp. bulgaricus (Lb) strain, wherein the Lb strain is lactose-deficient and capable of metabolizing a non-lactose carbohydrate.
COMPOSITION FOR PROMOTING ABSORPTION OF PHYTOCHEMICALS
Disclosed is a composition for promoting absorption of a poorly water-soluble phytochemical which can significantly improve the intake of a phytochemical into a body, especially a migration speed and/or a migration amount of the phytochemical into a blood. A polysaccharide-containing lactic acid bacterial product, which is produced by Lactobacillus delbrueckii ssp. bulgaricus OLL1251, can significantly enhance the intake of a phytochemical Into a body, especially a migration speed and/or a migration amount of the phytochemical into a blood. Thus, the composition for promoting absorption of a phytochemical according to the present invention includes, as an active ingredient, the polysaccharide-containing lactic acid bacterial product. Furthermore, the composition for promoting absorption of a phytochemical is useful as a food additive composition. In addition, a food, or a beverage, or a food or beverage composition to which the composition for promoting absorption of a phytochemical is added can obtain an effect of promoting absorption of phytochemical.
PROCESS FOR PRODUCING AN IMPROVED FERMENTED MILK PRODUCT USING A SPORULATION NEGATIVE BACILLUS STRAIN
The invention relates to a method for producing a fermented dairy product, comprising: (a) providing a milk substrate, (b) fermenting said milk substrate with a lactic acid bacterium starter culture, wherein step (b) is conducted in the presence of at least one Bacillus strain selected from the group consisting of a sporulation-negative Bacillus subtilis subsp. natto strain, a sporulation-negative Bacillus coagulans strain, wherein a sporulation-negative strain is a strain, which forms no spores when subjected to the following method: i) inoculating 1% of a culture of the strain to be tested, grown over night in Veal Infusion Broth (VIB) at 37° C., 180 rpm, into 50 ml of a standard sporulation inducing medium contained in a 500 ml baffled shake flask, ii) allowing the inoculated medium to grow overnight at 37° C. while subjecting it to shaking at 0rpm, and iii) testing for spores the next day.
Method of improving quality of sleep of an organism, a method of improving overall health of an organism, and a method of raising vitality of an organism
It is an objective of the present invention to newly create a method of improving quality of sleep and to increase consumer options for such a method. In the method according to the present invention, at least one (i) at least one lactic acid bacterium of genus Lactobacillus selected from the group consisting of Lactobacillus delbrueckii, Lactobacillus delbrueckii subsp. bulgaricus, Lactobacillus gasseri, Lactobacillus paragasseri, Lactobacillus rhamnosus and Lactobacillus acidophilus and (ii) its metabolite or a composition containing the same is ingested by an organism to improve quality of sleep of the organism, to improve overall sense of health of the organism, or to improve vitality of the organism. Here, the lactic acid bacterium of the genus Lactobacillus is preferably Lactobacillus delbrueckii subsp. bulgaricus, and more preferably Lactobacillus delbrueckii subsp. bulgaricus OLL1073R-1(FERM BP-10741).
FERMENTED MILK AND METHOD FOR MANUFACTURING FERMENTED MILK
In a preparation step, raw material milk is prepared. In a lactose degradation step, at least part of lactose included in the prepared raw material milk is degraded using a lactose-degrading enzyme. The lactose concentration in the raw material milk in which lactose is degraded is not more than 2.5% by mass with respect to a total amount of the raw material milk. A lactic acid bacterium is added to the raw material milk in which at least part of lactose is degraded, and the raw material milk to which the lactic acid bacterium is added is fermented.
STREPTOCOCCUS THERMOPHILUS PRODUCING GAMMA-AMINOBUTYRIC ACID AND APPLICATION THEREOF
Provided are Streptococcus thermophilus for producing -aminobutyric acid and an application thereof. The Streptococcus thermophilus for producing -aminobutyric acid is named Streptococcus thermophilus ST 36 and is preserved in the Institute of Microbiology of the Chinese Academy of Sciences, the preservation number being CGMCC NO. 20676, and the preservation date being 18 Sep. 2020. Also provided are a screening method for Streptococcus thermophilus for producing -aminobutyric acid, a preparation method for a dairy product containing -aminobutyric acid, and a dairy product containing -aminobutyric acid prepared by using the preparation method. The Streptococcus thermophilus for producing -aminobutyric acid has strong -aminobutyric acid synthesis capability and short fermentation time, and the prepared dairy product contains rich -aminobutyric acid.
