Enrichment of palmitoleic acid and palmitoleic acid derivatives by dry and solvent-aided winterization
The present invention provides a fatty acid mixture enriched with palmitoleic acid and palmitoleic acid derivatives relative to the starting lipid mixture; fractionations procedure describe herein are winterization methods. The invention provides methods of dry winterization and solvent-aided winterization alone and in combination. In some embodiments, the palmitoleic acid and palmitoleic acid derivative enriched mixture described herein contains less than 1% of palmitic acid and palmitic acid derivative. The invention also provides palmitoleic derivatives of use as dietary supplements.
VEGETABLE FAT COMPOSITION FOR EDIBLE APPLICATIONS WITH IMPROVED TASTE AND MELTDOWN
The present invention relates to a vegetable fat composition for edible applications wherein, in said vegetable fat composition, the sum of saturated fatty acids is in the range from 93.0% to 99.0% by weight; sum of saturated C12:0 fatty acids is in the range from 40.0% to 60.0% by weight; sum of mono-unsaturated C18:1 fatty acids is in the range from 1.0% to 6.0% by weight; and sum of mono-unsaturated C40:1 to C48:1 triglycerides is in the range from 1.0% to 5.5% by weight. The invention also relates to uses of the vegetable fat composition in coating or enrobing for bakery, confectionary and/or moulding applications, such as chocolate or chocolate-like coating, as well as an edible application product comprising the vegetable fat composition.
SEPARATION PROCESS
Present invention relates to a palm oil separation process comprising the following steps: step a) subjecting a palm oil starting material to short-path evaporation to obtain a distillate and a palm retentate: and step b) subjecting the palm retentateobtained in step a) to a dry fractionation step to obtain a stearin fraction and an olein fraction. Present invention further relates a soft palm mid fraction or a hard palm mid fraction obtainable by the process according to the invention and to a fat composition comprising the hard palm mid fraction and a StOSt-rich fat. In addition, the invention relates to a confectionary product such as chocolate, a chocolate-like product, cocoa-based fillings and cocoa-based coatings. The invention also relates to the use of the fat composition as a cocoa butter equivalent. The aim of the invention is to increase the yield and purify of the stearin and olein fractions obtained.
PRODUCTION OF SATURATED FATS IN MICROBES
The present invention relates to extracted microbial lipids, microbial cells comprising the lipid, and extracts thereof. The present invention also relates to use of these lipids, cells and extracts in foods, feedstuffs and beverages.
LIPID COMPOSITIONS COMPRISING TRIACYLGLYCEROL WITH LONG-CHAIN POLYUNSATURATED FATTY ACIDS AT THE SN-2 POSITION
The present invention relates to lipid comprising docosapentaenoic acid and/or docosahexaenoic acid preferentially esterified at the sn-2 position of triacylglycerol, and processes for producing and using the lipid.
LOW SATURATED FAT BLEND FOR USE FOR MOISTURE BARRIER COATING IN FROZEN CONFECTION
The present invention relates to a barrier coating composition for coating frozen confection, comprising, expressed in weight % based on the total weight of the coating, 40-60 wt. % of a fat or fat blend, preferably 45-55 wt. %, said fat or fat blend comprising the following fatty acids: 45<=C16:0<=55 wt. %, 4<=C18:0<=10 wt. %, 30<=C18:1<=39 wt. %, 3<=C18:2<=7 wt. % linoleic acid, and said fat blend comprising a solid fat profile comprising: 75%<=N 0<=95%; 60%<=N 10<=90%; 30%<=N 20<=60%; 18%<=N 25<=35%; 0%<=N 30<=12%; and 0%<=N 35<=5%, and said barrier coating having yield stress of 0.90 to 1.65 Pa.
