Provided is a method for producing a polyunsaturated fatty acid while preventing deterioration of a silver salt solution. A method for producing a composition comprising a polyunsaturated fatty acid, comprising: supplying an aqueous solution comprising a silver salt into a reaction vessel to contact the aqueous solution with a raw material solution comprising an alkyl ester of the polyunsaturated fatty acid; and collecting the aqueous solution comprising the silver salt which has been contacted with the raw material solution from the reaction vessel, wherein the supply of the aqueous solution comprising the silver salt into the reaction vessel and the collection of the aqueous solution comprising the silver salt from the reaction vessel are carried out concurrently with each other.

The present invention addresses the problem of providing a crystallization method having excellent separation performance between a crystal fraction and a liquid fraction after crystallization in a dry-mode separation method employing stirring crystallization and compression filtration, whereby it becomes possible to produce an SUS-rich oil/fat from an SUS-containing oil/fat. In the dry-mode oil/fat separation for producing an SUS-rich oil/fat having an SUS content of 60% by weight or more from an SUS-containing oil/fat having an SUS content of 30% by weight or more, a crystalline S3 component is added to the SUS-containing oil/fat in an amount of 5 to 200 ppm by weight relative to the amount of the SUS-containing oil/fat at a temperature that is higher by 0 to 2 C. than a cloud point of the SUS-containing oil/fat so as to be mixed, and performing stirring crystallization. When the SUS contains StOSt as the main component, the S3 component is preferably one derived from an extremely hydrogenated oil of an oil/fat that is in a liquid form at ambient temperature.

The present invention patent application belongs to the field of mechanical engineering and consists of a system and process for palm oil extraction integrally configured for processing the entire fresh fruit (rachis, spikes and seeds or fruits) by stages of cracking, threshing, dynamic sterilization and subsequent pressing. Said disclosed system and process allow increasing the percentage of oil extraction with less equipment and a smaller workspace compared to that required by the already known conventional processes, as well as using smaller amounts of water and energy. Additionally, the disclosed system and process allow obtaining sterilized plant material with low humidity, which may be used as organic matter for composting or as fuel of the extraction system itself.
