Methods of separating components traditionally considered as waste material from mold-fermented compositions are described. The waste components can be separated either from unfiltered compositions or from a separation stream separated from a composition. In some embodiments, filamentous fungus used in the production of the mold-fermented composition is specifically targeted for separation. Incorporation of separated waste components into various products are also described herein. In some embodiments, the separated components are used in alternative meat products and other foods designed for human consumption. Separated components can also be used in animal feed, as feed stock for other fermentation processes, or for use in treating food, creating cosmetics, or chemical processes.

A fermentation apparatus for preserving the aroma of a fermentable beverage is provided. The fermentation apparatus comprises a flow passage fluidly connectable to the headspace located above a fermentable beverage in a fermentation container. A carbon dioxide scrubber in the flow passage receives a headspace fluid mixture comprising at least carbon dioxide gas and an aromatic fluid originating from the fermenting beverage. When the headspace fluid mixture contacts the carbon dioxide scrubber, the carbon dioxide scrubber retains a modified fluid in the flow passage. The modified fluid has a lower carbon dioxide gas concentration and a higher aromatic fluid concentration than the headspace fluid mixture. The flow passage directs the modified fluid back to the headspace to at least partially retain the aromatic fluid in the fermentable beverage in the fermentation container. A method for preserving the aroma of a fermentable beverage is also provided.

A method for producing an ethanol solution includes obtaining, from a starting liquid, a liquid feed having less than by weight of constituents and having 3% to 25% by weight of ethanol, supplying the liquid feed to a feed stream inlet of a reverse osmosis separation system having a first pass, wherein (i) each pass has an reverse osmosis membrane filtration unit, each membrane filtration unit having an ethanol rejection percentage of between 50% to 99%, and (ii) each pass has the feed stream inlet for a feed stream, a permeate stream outlet for a permeate stream, and a retentate stream outlet for a retentate stream, operating the system to maintain pressure in one of the membrane filtration units in a range of 1,200 to 4,000 psi, and obtaining retentate that is enriched with ethanol, the retentate differs from the starting liquid by absence of the removed constituents.

A forward osmosis (FO) filtration technique removes pure water from a conventional brewed beer; accordingly, the beer extract can be produced without distillation or other alteration steps that may negatively impact of flavor and aroma components of the beer. A draw solution is used to provide a differential osmotic pressure through a FO filtration device. The diluted draw solution is recycled by reverse osmosis, distillation, and combinations thereof.
