Method for producing a sugar crystal-containing liquid
PURPOSE: An object of the present invention is to provide a method for producing a sugar crystal-containing liquid with good reproducibility, wherein crystallization is enhanced, it is unnecessary to add seed crystals which may affect the number of grains and a size of the crystals, and graining conditions are stable. CONSTITUTION: The present invention is a method for producing a sugar crystal-containing liquid, wherein the method comprises steps of preparing a liquid supersaturated with sugar; and applying a shearing force to the liquid, characterized in that the step of applying the shearing force comprises exerting a pressure higher than atmospheric pressure on the liquid to make the liquid pass through a narrow space.
Method of making set-date syrup
A method of making set-date syrup can transform unprocessed (uncrystallized) date syrup into a set-date syrup. The method can include controlled crystallization of the sugars in the unprocessed date syrup. A portion of the unprocessed syrup can be used to produce a seed batch. The seed batch can be made by allowing the unprocessed date syrup to crystallize. The seed batch can then be mixed with an amount of unprocessed syrup in appropriate proportions to provide a mixture. The mixture can be maintained for a period of one to seven days at a temperature ranging from about 20 C. to about 15 C. to provide the set-date syrup.
COMPOSITIONS BASED ON MAPLE SAP, VEGETABLE JUICE OR FRUIT JUICE, AND PROCESS FOR MANUFACTURING SAME
The application relates to compositions based on maple sap, fruit juice and/or vegetable juice having a high added value. In particular, said compositions have high concentrations in polyphenols, phosphorus, magnesium, calcium and potassium, for example. These concentrations are higher than those in maple sap made by previous traditional or commercial processes and higher than those in fruit or vegetable juices or syrups. Furthermore, said compositions have an antioxidant effect that is also higher than that in commercial maple sap made on an industrial or small scale and higher than that in commercial fruit or vegetable juices or syrups. The application also relates to processes for making such compositions.
Cooling crystallizer and sugar crystallization method
The invention relates to a cooling crystallizer (2.0) for saccharose magma in a vertically oriented container (2.1) which has an upper inlet (2.2) for supplying magma and a lower outlet (2.3) for discharging magma, comprising multiple cooling blocks (5.0) which are mutually spaced in a vertical direction. A heat carrier fluid flows through the cooling blocks (5.0), and the cooling blocks are coupled to a heat exchanger in order to dissipate heat from the magma, wherein multiple cooling blocks (5.0) are combined to form a cooling packet (5.1; 5.2), and the cooling packets (5.1; 5.2) are designed as separate cooling circuits with separate heat exchangers (2.1.2; 2.2.2).

A hardwood-derived carbohydrate composition comprising monomeric sugars in an amount of 75-98 weight-% based on the total dry matter content of the carbohydrate composition, wherein the monomeric sugars include monomeric xylose, the amount of monomeric xylose in the carbohydrate composition being 55-80 weight-% based on the total dry matter content of the carbohydrate composition, and wherein the carbonyl content of the carbohydrate composition is 1000-4500 g/g based on the total dry matter content of the carbohydrate composition. Further is disclosed a method for producing the hardwood-derived carbohydrate composition and the use of the same.
